Baked Pork Chops I

Tried this recipe tonight. Husband loved it. My only changes were that I used boneless centre cut pork and I used a green apple infused white wine in the sauce, because of the boneless pork, I reduced the cooking time to 30 minutes at 350 and then another 20 minutes with the sauce. I also double breaded the pork using bread crumbs mixed with some garlic powder, Italian seasoning, and cayenne pepper. The pork turned out great, very juicy and perfectly coloured inside however I did find that pouring the sauce on top and that extra baking did take away from the nice crunch that the breading had as it became a little soggy. I served it with steamed carrots, yellow beans and snow peas, corn on the cob and some baby red roasted potatoes. Great dinner!!

Chef John's Chicken Kiev

This was my first attempt at making Chicken Kiev and I followed eh instructions exactly for fear of messing it up. When you follow a Chef John's great video instruction, you really just can't go wrong. They came out absolutely perfectly! My husband was impressed and he thought it was delicious. I served it with roasted baby red potatoes and grilled asparagus. It does take a little bit of time to to do these, but well worth it!

Chef John's BLT Pasta

Made this the other night and it was a big hit. Only made a couple of changes. First off I doubled the recipe because I was feeding a large hungry bunch. I used Tortiglioni pasta (large spiral tubes) Used kale rather than arugula (just because that's what I had in the fridge) and my grocery store was out of the creme fraiche so I substituted with sour cream and a spoonful of savoury garlic cream. Great warm from the stovetop or as a cold leftover the next day. Very happy with this recipe. A keeper for sure!

Kale, Apple, Avocado, and Bacon Salad

My husband and I were invited to another couples place for dinner and when I asked her what I could bring, she said salad. I didn't want to bring just a plain old garden salad so I went on the search for something a little fancier. Along came this recipe to my inbox like an food angel! This was actually my first time using kale so I was a a little nervous as I had heard talk about bitterness and such. I doubled the recipe and did pretty much exactly what it read. The salad was a huge hit with our friends as well as my husband! I enjoyed it as well but found that I may have used a bit too much of the apple cider vinegar as I found it a little overpowering but no one else seemed to feel that way. Will definetly make this again. Thanks for a great recipe!

Slow Cooker Teriyaki Pork Tenderloin

Absolutely loved this! I followed the recipe pretty much except that I didnt have any brown sugar so I substituted for white and just used less of it. I also added a packed of onion soup mix in the place of the onion. Cooked beautfully! Great flavour and even beter for sandwiched the next day!

Chili-Lime Chicken Kabobs

A Summertime Supper STAPLE! This was wonderful! Made a few changes..didn't have red wine vinegar so I used Balsamic Vinegar, also added a tsp of Montreal Chicken spice, 1 tsp of Jerk seasoning and 1 tsp of cajun spice. I marinated for 3 hours and skewered with alternating red and green pepper, served over herb and wild rice with corn on the cob on the side. Fantastically tasty chicken and very moist. A definite keeper.

BBQ Chicken Calzones

I made this recipe 2 nights ago and it got rave reviews from my fiance. I used Pillsbury Pizza crust and I noted from others reviewers to watch the cooking time. Mine were done after 17 minutes baked at 400. I followed the recipe except I used onion soup mix instead of an onion and I added banana pepper rings and a few dashes of Franks Red Hot because we are both big fans of spicy. The only thing I would change for next time is the way I shredded my chicken breasts. I did it in my food processor and I think next time I will manually shred it to get a more uneven consistency. The processor shredded it a bit too much for me. But it was still very tasty and paired with a ceasar salad, it was great. Thanks!

Slow Cooker Moose Roast

My fiance went hunting and I ended up with a freezer full of moose and no clue what to do with it since I had never even tasted moose, let alone cook it! I came across this recipe and thought I would give it a shot. IT WAS FANTASTIC!!! No gamey taste at all and the meat was fall apart tender! My fiance said it was the best moose roast he had ever had! Quite the compliment coming from a hunter! I have made this recipe about 4x since and it is totally foolproof! Wonderful every time and the apple juice with the meat juices makes for a simply scrumptious gravy. Thank you so much!!
