Apple Pie by Grandma Ople

I honestly don't know what all the fuss is about with this one. To quote my husband, "It was good, but I wouldn't ask you to make it again." Definitely not worth the extra bother of making the sauce and the lattice crust. I'm going to take my husband's advice, and won't be making it again.

Lazy Golumbkis

This was very quick and easy to put together. I would make it again if I were craving cabbage rolls and didn't want to fuss over the real thing. Tthe rice got very mushy. I would probably add it later on next time. My husband like it a lot.

Great Pumpkin Cookies

These got incredibly flat, even though I chilled them before putting them on the baking sheets. The flavor was good, kind of like a carrot muffin, but next time I'll use butter flavored Crisco instead of butter and see if they spread out less.

Best Peanut Butter Cookies Ever

These were easy to make and tasted okay, but I prefer my regular peanut butter cookie recipe. They had a tendency to burn on the bottoms for some reason--I checked my oven, and the temperature was fine. I won't be making them again soon.

Roast Chicken with Potato, Olives and Greek Seasoning

This recipe was more time consuming compared with a simple roast chicken, but it tasted utterly fabulous. My husband pronounced it "outstanding." After a lengthy examination of the extensive spice section at my local grocery store, I was unable to find the Greek seasoning mix listed (sorry, McCormick's, but I tried!) and so I used a mixture of oregano, dill (small amount), black pepper, salt, and minced garlic instead.

Caramel Filled Chocolate Cookies

These are absolutely fantastic! I made them for a bake sale, and after tasting one, my husband told me they weren't getting out of the house. One day later, he says they're the best cookies he ever had in his life. I used 1/2 cup more of flour than the recipe called for, and didn't have any leakage problems. I made the dough into a ball in the palm of my hand, flattened it out to about a 2-1/2 inch diameter circle, and then bunched it around the Rolo. I did try to make sure the bunched-up part ended up on the bottom of the cookie, so as to minimize any possible leakage. I also added 1/2 teaspoon of salt, and mixed all the walnuts into the dough. I will make these again and again.

Cabbage Roll Casserole

Oh my gosh, this was so good! I often have craved traditional cabbage rolls, but never felt like they were worth all the trouble of blanching the cabbage leaves, rolling them up, etc. This is the perfect answer. It's so easy, it's almost embarrassing. My husband loved it, and it was just as good the next day. Because I wanted a flavor like the ones at the Lebanese deli, I used ground lamb instead of beef, and I added some brown sugar and cinnamon. Fantastic!

Six Spice Maple Cornish Hens

The flavor was fantastic, but oh my gosh, it was so fiery hot, I could hardly eat it. And this was after cutting both the red pepper and black pepper in half. My husband loved it. I will definitely make it again, but I will cut the pepper way, way down to accommodate my tender Minnesota mouth! Instad of grilling outside, I roasted these in the oven at 350 degrees for about 1 hour 15 minutes. A very easy and delicious way to make game hens.

Breaded Turkey Breasts

This was a great fast recipe. I tinkered a bit by using chicken breasts instead of turkey and water cracker crumbs instead of bread crumbs. It came out great--like an upscale version of chicken fingers. Also, they were great the next day served cold with a little honey mustard for dipping. I'll be making this one often.

Tabbouleh III

My husband loved this. I thought the flavor was good,but it was too watery, maybe because of the cucumbers or the large amount of water used to hydrate the bulgur. Next time I'll try only 1 cucumber and less water.

Spinach Chickpea Curry

Very good and easy. The only time consuming part was washing the fresh spinach, so next time I'll use frozen spinach. I added a cooked sweet potato, and it was great! Using the curry paste was so easy I may never go back to powder. The flavor of the paste also seemed fresher and more authentic. My husband loved it.

Lime Chicken Soft Tacos

I made the lime juice mixture ahead of time and then used it to marinate the chicken overnight in the freezer. It was very tasty and tender done that way. I didn't have fresh tomatoes, so I used a few canned diced tomatoes mixed in when I finished off the cooking of the chicken. My husband loved it!

Plum Blueberry Upside Down Cake

A little fussy to make, but the results are worth it. Wonderful flavor, and I loved the texture of the cake part. I confess that I didn't turn it out (afraid it wouldn't come out neatly) , but just spooned it out of the pan.

Chicken Tortilla Soup III

Really good and easy. I confess that I was beginning to wonder as I combined the various ingredients (the creamed corn made me especially nervous), but it turned out to taste like what I'd expect from my favorite Mexican restaurant. My husband raved about it! Definitely a keeper!

Spinach Cheese Pie

This sounded great, but it ended up tasteless and bland, and I'm not sure what I'd do to jazz it up and improve the flavor. The amount of cheese, plus the double crust, made both my husband and me feel like we should go out and plow a field or something after supper. It wasn't difficult to make, just not worth it. The leftovers were even more boring than the first night.

Cindy's Pumpkin Pie

I wanted a good and easy recipe for my Thanksgiving pumpkin pie. This was super easy using canned pumpkin and store bought graham cracker crusts. I used Edy's Homemade Vanilla ice cream, and the flavor was perfect, not too heavy on the pumpkin. This will be my holiday pie from now on. My husband and I loved it! Actually, so did our dog--glad the recipe makes two pies, but that's another story. Note to self for future: greyhounds can reach to back of kitchen counter.
