Quinoa Vegetable Salad

FOR WARM QUINOA VEGETABLE SALAD: I do not like cold salads/hard veggies so I made warm version of this! All you have to do is heat some oil in a pan and fry the bell peppers and carrots. Once they are semi-tender add the corn and tomato until the veggies are as soft as desired. Meanwhile, add the cilantro, mint, oil and balsamic vinegar (I needed double oil/vinegar than what the recipe said) and let it sit until the quinoa is cooked. Once it's ready, add it all together and you have warm quinoa vegetable salad!

Chickpea Falafel Burgers

These burgers are absolutely amazing, but only if you serve them with MAYO. Without mayo they are still good but with mayo they are great. Cheese is also good but not as necessary. Also, you need more bread crumbs than the recipe suggests!

Tofu Parmigiana

This was a good recipe but very simple. I would make it as a side dish. I changed the recipe as others suggested. It is very filling, my boyfriend can never get enough food and he was stuffed even though it looked like there wasn't enough. Oh, and it really does have a chicken-like taste to it. Like chicken with a soy flavour.

Addictive Sweet Potato Burritos

I suggest this recipe for those who like sweet entrees. I didn't like the sweet potato portion of this recipe (it's not bad, its just a personal preference) but I really liked the bean part and when I make this recipe in the future I will eliminate the sweet potato (I might try it with regular potato). Changes: I used black beans instead of kidney beans like the others suggested but I didn't have enough so I used 1/3 chickpeas as well. I also only used 1 cup water and used a hand blender to mix the beans/chickpeas/onions/garlic mix. This recipe makes more bean mix than sweet potato so you can't really do half half with each mix.
