My name is Carrie, I live in Florida! I have the most amazing family. I am the mother of a 6 month old baby boy named Atticus! I am just getting into cooking and really am enjoying!! My family as a New Year's resolution have become Vegetarian. We really didn't eat a ton of meat anyways. So it wasn't a hard transition! But has really helped me with some great Vegetarian meals! Chris (My Husband) has really inspired me to want to be creative in the kitchen since he loves cooking so much!
My favorite things to cook
I love cooking Mexican foods. We use a lot of black beans to substitute for meats. Black bean burgers is another thing I enjoy making. Easy and good!
My favorite family cooking traditions
My Father and I when I was growing up use to always have fun on Thanksgiving. He always let me help out making the Potato salad. It was always something I looked forward too. My Father passed away in 2004. So no new traditions yet. We don't usually do Holidays at our house. But hopefully once we do start hosting, My Family will have some great traditions we will all remember!
My cooking triumphs
I was really proud of myself this past Thanksgiving, I was actually asked to help out with cooking. So I decided to make a Zucchini casserole. To my surprise everyone loved it. I recently just really started trying to cook. My husband is an awesome cook who loves to cook for us, so he has made it hard for me to get into it! So I was happy everyone loved my dish!
My cooking tragedies
Hmm...way to many to count! Chris blames it on me being a lefty! But I have come along way in my cooking skills! :)

Sassy Spaghetti
I loved the recipe! But I did change it up just a little! I used egg noodles instead of spaghetti noodles. Once I had everything mixed together I baked it. But before I put it in the oven to bake I made a mixture of... 1/3 cup Parmesan cheese, 1/2 cup of organic light milk, 1/2 cup of light sour cream. I poured that on top. Then after that I sprinkled shredded Mozzarella on top. My husband loved it, it was spicy to his liking! We all enjoyed it!

Black Bean Vegetable Soup
I made this soup for dinner last night! And it was really easy for me to follow and it turned out to be yummy. I did add 1 cup of Mahatma rice to make it a little thicker. The flavor was perfect! I could have eaten it with or with out the rice. This was just what my family was wanting. A yummy black bean soup!
