Curried Coconut Chicken

YUM. Made this for a potluck today and it was the hit of the party. I needed to make a bit more so I made it for 8 servings. I noticed that the cans were all doubled in the recipe even though I didn't double the servings which would have been way too much liquid so be careful of that if you are making more than 6 servings. Other than that, I didn't change a thing and it was great. I did leave it simmering for more than an hour with the lid off in order for the sauce to get thick enough.

Chicken Cacciatore

I made this pretty much as shown, except I used real garlic. It was really easy and quick and the whole family liked it including two picky kids. Definitely an easy one for a working mom who just got home and needed to figure out a quick meal!

Beef Taco Skillet

This was really yummy!! I had to change it a bit because I didn't have all the ingredients but it still turned out soooooooooooooo good. It always bugs me when I read reviews and people totally change the recipe and then say it was good but this time I really had no other choice and I want others to know that it still turned out awesome! Instead of tomato soup, I used a 15 oz can of chile con carne (no beans). The only salsa I had on hand was a salsa with mango and peach which gave it a really subtle sweet taste. I did saute the meat in onions, then added some garlic, salt and mexican seasoning to the meat directly after draining it. I followed the recipe as far as putting the tortillas in the mix and that was my favorite part!! So yummy. The whole family loved it and we will definitely be repeating this one. Thanks!

Slow Cooker Chicken and Dumplings

Awesome! My husband and 3-year old loved it (and he is usually quite the picky eater!). I used one can of the dough and thought it was enough. Cooked the whole thing on high for 8 hours with the dough in there for the last hour. The chicken was so soft and shredded easily. Added a bit of salt and poultry seasoning per other reviewers. Tasted yummy leftover too. Thanks so much for the recipe!

Chicken Piccata II

I thought this was really good! Just a few minor changes: I used olive oil to brown the chicken to make it a little more on the healthy side. I also added 1/2 teaspoon sugar to the sauce and as others suggested used 1 less Tbsp lemon. Made it next to Rice Pilaf and my husband and 3 year old ate it all up!

Ginger Glazed Mahi Mahi

All I can say is YUM. We actually use this recipe with tilapia and even better if I can find it, with halibut. I haven't actually tried it with Mahi Mahi but it is great on anything! A regular in our rotation now.

T's Easy Chicken

Really easy and sooo good. I scale to 4 but use a whole can of Italian diced tomatoes and a full cup of mushrooms. Also used a tiny bit less lemon then what the recipe calls for and added 1/2 teaspoon sugar. My whole family, including my 2 year old, loves it! Thanks!

Chrissy's Sweet 'n' Sour Tomato Salad

I thought this salad was great and so easy to make! I agree with the others that it makes way too much dressing. I had to dump some out. I also added cucumbers and used 1/2 balsamic vinegar and 1/2 white vinegar. My other suggestion is that you mix the dressing in right before serving it. I made the mistake of making it a few hours before serving it and it wasn't nearly as good as it was right after I made it. I will be making this again though for sure!

I wasn't very impressed with this recipe. I think I may have liked it better without the chicken broth. My husband absolutely hated it and wouldn't even eat it. I don't think I will be making this one again.

Tomato Chicken Parmesan

This chicken parmesan is great and easy to make! I skipped the frying step and put the chicken straight in the oven (adding the cheese for the last 15 minutes or so) and used fat-free mozarella to keep it light. Great recipe!
