Slow Cooker Pulled Pork

I was looking forward to this recipe since it seems so simple. It really did not work for me and my family. We just did not like the taste of the root beer in the pork...it was almost all we tasted.

Downeast Maine Pumpkin Bread

This was delicious!! I doubled the recipe and made a dozen muffins, loaf, and the rest in a cake pan. I made very slight changes. I replaced half of the oil with unsweetened applesauce and added about 1 1/2 tsp vanilla. Next time I will use some white raisins. Simply delicious!!

Chicken Fried Chicken

This was great!! I did, however, have to replace the potato flakes with panko bread crumbs because that's all I had on hand. My husband loved it! Best eaten fresh. I tried doing different things with the leftovers to make them as crisp, but didn't compare to the day of when it's fresh!

Chocolate Trifle

Most of those who rated this high tweaked the recipe so the overall rating is misleading. I made this exactly as per recipe and found it too sweet. It could have all been changed with omitting the condensed milk and just making the pudding as the box directions. I can guarantee it would have made 5 stars otherwise in my book!

Chicken Marsala

I made this for guests and they thought it tasted like restaurant quality. I took suggestions from some of the reviews and doubled the wines and mushrooms. I added a little cream at the end to thicken the sauce and simply added some dry basil to the flour to give it some color and flavor. It really WAS like restaurant quality!

Grilled Salmon I

This was restaurant quality taste! I'm not a big fish fan, but I loved this recipe. I did not add the additional salt and used low sodium soy sauce, and it still had enough salt. I baked it in the oven at 425 for about 15-20 minutes each wrapped in foil. I used some of the extra marinade and made a brown rice/ vegetable stir-fry as a side. It was great!

Super Moist Pumpkin Bread

I've experimented with several pumpkin breads, and I have finally found the one. This is easier and since my son has an egg and dairy allergy, this one works great! I followed directions exactly except for adding the coconut flakes and nuts. It was very moist inside with a very slight crunch outside. Just perfect!

Braised Balsamic Chicken

I changed a few things because I had to use what I had on hand. I used boneless chicken thighs, did not use rosemary, and used only 1/4 cup balsamic vinegar. It came out sooooo delicious!!

Orzo with Parmesan and Basil

This was great!! I did not have fresh basil but added sauteed zucchini and squash to add something healthy. Did not change taste of original recipe. It would still have been great without it.

Caramelized Baked Chicken

Paleo One Minute Muffin

The only changes I made was to add 2 packets of Stevia/Raw Sugar blend and eat with maple syrup. With the changes it is a 4 star, without I would rate it a 3. It has an"eggy" taste a lot of Paleo baked foods have that I had to cut with something sweet. Otherwise, it is a quick fix. To make it even quicker, I may portion out the dry ingredients in baggies and just add the wet when I'm ready to make it!

Easy OREO Truffles

So easy and soooo delicious!! The trickiest part was to dip the balls successfully in and out of the chocolate. I used the 2-spoon trick. I used chocolate almond bark for the chocolate which is easier to work with.

Vegan Chocolate Cake

My son has a dairy and egg allergy. I made these for his birthday and frosted with Duncan Hines whipped chocolate frosting which didn't have milk. I made cupcakes and the only changes I made was doubling the cocoa and adding 1/2 cup of vegan chocolate chips. My 4 yr old loved them as did I! It was really like the real thing, no joke!

Egg-Free Dairy-Free Nut-Free Cake

Ever since I discovered this recipe, I've been making this every year for my dairy and egg allergy 4 yr old son for his bday. He absolutely LOVES it! It was his first cake ever and he has no complaints. The only thing I can say is that it comes out a little more denser than most cakes, kinda like a brownie, but still tastes great for an allergy friendly chocolate cake.
