Cinnamon Crown Rolls

This bread is the perfect combination of cinnamon and GOODNESS!!! The cream gives it a taste that you just don't find in regular recipes. If you don't have time to go the whole yeast bread route, you should seriously consider trying it with 2 rolls of biscuit dough, quarter them and roll into balls. Although the classic yeast bread makes it the best. ENJOY!

Coconut Macaroons III

First of all, no need to mix it with your hands, because then you lick your fingers and end up eating the whole first batch raw. Second batch, try baking on a Silpat, I didn't have any sticking problems!

Turkey Enchiladas

WICKED GOOD! I'm not a big fan of mexican food, but I loved these. I added hot sauce to the meat after it was browned. I made the whole meat filling and froze half, baking only 6 enchiladas... perfect dinner for 2 (my guy ate 4!)

Peanut Butter Cup Cookies

These are the CUTEST little things I ever saw! I had to run out and buy a mini-muffin tin because the first batch were too flat for the pb cups. It is worth it because I am going to make these OVER AND OVER again!

Broccoli and Cauliflower Casserole

I couldn't stop eating it before I even baked it in the oven! I made this days in advance and froze it before I put the crackers on top. Defrosted in the fridge the night before I needed it, cooked according to directions after toping with crackers!

Mediterranean Stuffed Chicken

WOW! this chicken was a hit... of course i had to add something as everyone does :) raspberry sauce to pour over top & decoration: 1/4 c seedless rasp jam, 2 tbs oj, 2 tbs white balsamic vinegar... bring to boil in sauce pan, reduce 3-4 minutes. YUM!!!

Salmon Salad

Pretty good, I used the leftovers from Asian Salmon (found on this site) instead of canned salmon, made a great light dinner! ps. vanilla yogurt is NOT plain!!!
