Oatmeal Apricot Almond Bites

These cookies turn out really sticky and way too sweet the next day. Best fresh! I'm going to modify this recipe next time I make it to provide for less sugar and maybe and egg or two instead of honey. I liked the idea, though, because I love cookies but not the fat.

Scalloped Potatoes and Hamburger

Great idea! I thought the mushroom soup might be a little bland, so I used tomato soup instead. Also sprinkled garlic powder and grated cheese on first layer as well as second layer and was SO delicious! What a versatile recipe. This was so quick to make & I can imagine using it in many different ways. This one's a keeper.

Banana Chocolate Chip Cake

This was great, but I tweaked it to make it much more health-friendly. I used half whole-wheat flour, 1/3 c. sugar, and 1/3 c. oil instead. It turned out verymoist and flavorful without being greasy or too sweet. Served with the choco chips inside and ice cream/pudding sauce, it's sweet enough without adding all the extra sugar. Delicious! I also baked this in an 8x8 pan and it turned out wonderufl.

Quinoa Veggie Salad with Zesty Vinaigrette

LOVE the dressing (although I cut the oil in half)! Great combo of veggies & quinoa. Very quick - the hardest part is chopping the veggies. Yum. It's a keeper.

Gingerbread Pancakes

These were a great idea, and after a lot of modification, they were great-tasting as well! I think there are a number of typos in the original recipe, so I came up with my own take on it. Here it is: 2 tbsp baking powder, 3 tbsp cocoa, 2 tsp ginger, 3 eggs, some extra flour, @1/2 c. to thicken to proper consistency. Enjoy!

Ranch Dressing II

This was a great Ranch dressing! One of the best I've tried. I halved the sour cream and made up the difference with buttermilk. The buttermilk made it into a dressing instead of a dip.
