Taco Lasagna

I made this for my husband and 14 yr old daughter tonight. I followed the recipe pretty closely. I used ground turkey instead of ground beef (cheaper), Fiesta Blend cheese (already had it in the fridge), and a salsa containing some white corn and black beans. I usually prefer flour tortillas, but I used corn tortillas per recipe. It was so delicious! I will definitely make this again. Next time I'll probably serve it with a side of shredded lettuce and guacamole and maybe some sour cream.

Deep South Fried Chicken

Wow! I actually made fried chicken that turned out right! I've been trying now and then for years with no success, but this recipe was just what I needed. I did season the flour more than what was called for in the recipe, but I wanted to stay true to its simplicity. I used seasoned salt and black pepper to taste. I also decided to use a pack of thighs instead of a whole cut-up chicken so that all of the pieces were evenly done at roughly the same time. I will likely try using breasts too, so it will be little healthier (haha!). I used a cast iron skillet; it really does make a difference. I had originally planned to try some "fancier" recipes with batter, egg, etc in the near future, but I think I've found a winner here. Any recipe that makes my husband this happy gets 5 stars from me.

Oatmeal Dried Fruit Cookies

I was given some pomegranate-flavored and some blueberry-flavored Craisins and thought I'd use them in this recipe. I thought they were delicious (pomegranate was my favorite, but both were good). I did not have any trouble with the dough being too dry; I wonder if other reviewers who had this problem may not have used the correct amount of butter/margarine. I ended up with 5 dozen 2" cookies per batch, and they were nice and moist after 8 min in the oven. They came off the pan beautifully. The only problem I had was that I smashed them together a little and made a bit of a mess with them when I stored them.

Chicken Taco Filling

I used a whole economy pack of chicken breast halves (almost 5 lbs, so I used 5x the other ingredients). I put it in the crock pot on low for 8 hours overnight. In the morning, I shredded the meat, put it back into the liquid, and refrigerated it all. When I got home from work today, my family and I enjoyed "build-your-own" chicken nachos. While we all like different ingredients on our nachos, we ALL loved this chicken! If we don't gobble up the left-overs tomorrow, I will freeze it...or I was thinking that I could make a sort of chicken taco soup by adding some more broth, corn, tomatoes, onions, etc. Thanks for such a delicious and useful recipe!

High Temperature Eye-of-Round Roast

I had never heard of cooking a roast this way and was a little skeptical before I read all the reviews. However, I wanted to try something different so I wouldn't end up with a tough, dry roast. I am so glad I tried this. My roast was done just the way I like it, and the thin slices melted in our mouths. Now I can turn an inexpensive cut of beef into a tender roast. Thanks, Lyn!

White Chili VI

I love that this is so easy to throw together! I did use fresh skinless, boneless chicken breast halves, so I cooked on high instead for the 4-5 hrs to cook the chicken. Then we shredded the chicken and added it back into the crock pot. Great with a dollop of sour cream on top.

Pork Chops with Scalloped Potatoes

My family liked this dish, and I found it super easy to prepare. The thyme flavor was very strong, but we like it here. I did season my pork with salt, pepper, and garlic powder when browning but felt that no other changes were needed.

Sopa De Lima (Mexican Lime Soup)

I followed the recipe exactly (which I rarely do), and the results were delicious. With the exception of my youngest, who thought the lime juice was a little sour, my family loved it. I will make this healthy soup again.

President Ford's Braised Eye Round Steak

This was really tasty, and I've never had more tender eye of round steak! I increased the sauce and thickened it into a gravy with a flour/water slurry at the end. It was awesome over mashed potatoes! I had a little left-over and ended up making a "goulash" with that and some odds and ends I needed to use up. I added a packet of beef gravy mix and 1/2 block of cream cheese to the leftover gravy, chopped the leftover steaks, and served it all over egg noodles. That was way taster than it may sound; my family loved it.

Lentil and Sausage Soup

Wow! This was really good! My husband, who is not a fan of legume soups, even thought so. I used hot Italian turkey sausage (had a 20 oz package and used the whole thing). I didn't have any tomatoes, but I threw in an 8 oz can of tomato sauce I did have. Per other reviews, I cut liquids back a little. I used 9 cups of water and chicken bouillon granules (almost 3 Tbsp). Because of the bouillon, there was no need to add the salt called for in the recipe. It was perfect without any added salt (and I'm not shy when it comes to salt). This was my first attempt at lentil soup, and I am thrilled with the results. I will definitely make this again.
