Kickin' Collard Greens

Reviewed: Jan. 16, 2011
This recipe is fantastic. Just cooked them for dinner (along with some corn bread and sweet potato casserole) and my husband, a self-proclaimed "southern food critic" loved them and wants me to make them again tomorrow. Per the suggestions of others I used 6 slices of bacon (brown sugar cured) and also added about a tablespoon of brown sugar and bit more red pepper flakes as we like a little kick. I used 1 can of chicken broth as that is what I had but it seemed just right for us. Also, I did not cook the greens for 45 mins after adding the broth, probably only about 15 to 20, just til they reached the consistency that we like, which is tender but definetly not mushy. Great flavor and simple to prepare.

Cilantro Chicken and Rice

Reviewed: Sep. 6, 2010
Great recipe. I adjust as many others did and omit the flour and cut up the chicken into bite size pieces, also use green peppers because that is what I have most of the time. We like spicy so I usually add a few jalapeno peppers. My husband is not much of a chicken person normally, (and before this dish said he didn't like black beans) but he loves cilantro and garlic which is why I tried this. He now will tell me if it has been too long since I made this dish, which is why I am making it again for dinner tonight. Distinctive flavors and definitely makes a ton of food, which is great since it is just as good if not even better the next day for lunch.

Best Chocolate Chip Cookies

Reviewed: Jul. 6, 2010
My husband has me making these cookies all the time. They are definitely the best cookie out there. I don't seem to be able to get the perfect consistency of "crunchy and chewy" at least by my standards, but the taste is great and it certainly doesn't keep him from quickly making them disappear. The only change I make to the recipe is that I also add Heath toffee chips and I skip the hot water for the baking soda and just add more vanilla as other reviewers recommend. These cookies are excellent.

Bob's Mexican Stuffed Chicken

Reviewed: Jun. 2, 2010
This dish is very tasty. I used crushed tortilla chips as others suggested. Also I used yellow and green peppers with the mushrooms and red onion because that is what I had on hand. Instead of cheddar I used a mexican cheese mix. Our family likes things spicy so I also added a little cayenne pepper in addition to the chili powder in the crushed chips. I had chopped extra vegetables and sprinkled some of them in the baking dish as well. I love the consistency of the vegetables ...still a little crisp. And the chicken is nice and tender. Very delicious!

Bacon Wrapped Barbeque Shrimp

Reviewed: Mar. 16, 2010
Absolutely wonderful. Needed a quick meal and tried this to my families delight. I did follow other reviewers suggestion to use 1/3 pc of bacon to wrap around the shrimp and put the oven on broil and then turned off after a few minutes. Great to make ahead and use as an appetizer hot out of the oven. Definitely a keeper

Old Fashioned Peach Cobbler

Reviewed: Mar. 16, 2010
The filling for this recipe is wonderful. I have never used the crust portion because my husband loves Pillsbury ready made box crustand says "why bother". Everytime we are invited to a cookout, this cobbler is what they want me to bring. Definitely a favorite of friends and family. I still plan on trying the crust at some point but for now this filling and the box crust is the ticket.

Triple-Cheese Macaroni

Reviewed: Feb. 23, 2010
I made this exactly as the recipe states with the exception that I only added 1/2 the mustard. It was perfect, reheated very well. I didn't experience any of the "too soupy" issues mentioned in some of the reviews. I have even halved the recipe with the same success. My husband who is very opinionated about southern food absolutely loved it. I have also made it for cookouts twice with no leftovers remaining. It is now my go to recipe for macaroni and cheese because it is simple and delicious. Try it you will love it!
