Kickin' Collard Greens
This recipe is fantastic. Just cooked them for dinner (along with some corn bread and sweet potato casserole) and my husband, a self-proclaimed "southern food critic" loved them and wants me to make them again tomorrow. Per the suggestions of others I used 6 slices of bacon (brown sugar cured) and also added about a tablespoon of brown sugar and bit more red pepper flakes as we like a little kick. I used 1 can of chicken broth as that is what I had but it seemed just right for us. Also, I did not cook the greens for 45 mins after adding the broth, probably only about 15 to 20, just til they reached the consistency that we like, which is tender but definetly not mushy. Great flavor and simple to prepare.

Cilantro Chicken and Rice
Great recipe. I adjust as many others did and omit the flour and cut up the chicken into bite size pieces, also use green peppers because that is what I have most of the time. We like spicy so I usually add a few jalapeno peppers. My husband is not much of a chicken person normally, (and before this dish said he didn't like black beans) but he loves cilantro and garlic which is why I tried this. He now will tell me if it has been too long since I made this dish, which is why I am making it again for dinner tonight. Distinctive flavors and definitely makes a ton of food, which is great since it is just as good if not even better the next day for lunch.

Best Chocolate Chip Cookies
My husband has me making these cookies all the time. They are definitely the best cookie out there. I don't seem to be able to get the perfect consistency of "crunchy and chewy" at least by my standards, but the taste is great and it certainly doesn't keep him from quickly making them disappear. The only change I make to the recipe is that I also add Heath toffee chips and I skip the hot water for the baking soda and just add more vanilla as other reviewers recommend. These cookies are excellent.
