Chicken, Garlic, and Sundried Tomato Pasta

This was a great, go-to "nothing left in the pantry" kind of meal. I did not pre-cook the chicken breast. Instead for the sake of time and making this a one pot meal, I added the pieces of raw chicken directly to the sauce with an extra 1/2 C milk and 1/2 C water and turned out great. I also used the bottom of several different kinds of boxes of pasta probably measuring about 10-12oz and this was plenty of sauce - I used probably 1/2C of the pasta cooking water to add the sauce to the pasta. I also only used 2T of butter.

Chicken Milano

So, so good! This is definitely a make-again meal. I took other suggestions and made this in one saute pan. Followed the recipe as is except dipped chicken in seasoned flour prior to pan frying. While the chicken was cooking I soaked my cut sun-dried tomatoes in the chicken stock to make the sauce just a little quicker. I also subbed half and half for the heavy cream since that's what I had on hand. This sauce was the perfect amount for two servings, I would definitely suggest doubling it for four. Once the sauce was done, I melted in 4oz of romano cheese and let it rest off the heat for a couple minutes and it thickened perfectly.Also I LOVE sun-dried tomatoes and I thought the amount in the sauce was quite a lot. Next time will double sauce and leave amt of tomatoes the same. All in all a great recipe, thank you!

Bacon-Wrapped Pineapple Bites

I made this recipe for one of my son's parties and our whole family had great things to say about it. I used fresh pineapple for this recipe which worked out really well. I would say also be careful what packages of bacon you buy. One of mine was quite stringy which made wrapping the pineapple difficult and not so pretty. Also, be careful as wrapping the pineapple is time consuming!! Only change I made was I sprinkled with a very small amount of brown sugar just prior to baking.
