Mushroom Risotto

My first attempt at risotto and it was perfect, better than my fav restaurants! Only added 3 cups of broth and took longer than recipe said, but totally worth it! Used fat free half & half, and only half the amount of grated Parmesan, my attempt to save a few calories. Thanks for sharing this amazing recipe.

Pet Cookies

Very easy and my dogs loved them! One of my dogs is allergic to almost everything, including wheat germ and chicken! So I used turkey baby food instead of chicken and buckwheat flour instead of wheat germ.

Best Melon, Mango, and Avocado Salad

I thought this salad was amazing. Only changes I made were I didn't pickle the onion, left out the mango and used blood orange infused olive oil. Since I was taking it to a picnic, I mixed everything together instead of putting the fruit over the avocado. Everyone loved it! I'll be making this often!

One Dish Vegetarian Dinner

Really enjoyed this. Made some minor changes based on reviews and personal preference. Used whole wheat angle hair pasta. Added an onion and mushrooms. Used a combination of garlic and basil infused olive oils, and just added a little at a time until amount I wanted (about 1/4 c.). Added fresh basil and Parmesan cheese when I mixed the pasta with the olive oil/veggies. Oh, and used a combination of black and green Greek olives. The olives added a unique taste to this dish. Very good! Thanks for sharing!

Baked Cod with Boursin Herb Cheese

This was delicious! Sauteed fresh garlic, onion, pepper & tomato instead of canned. Used light Boursin cheese and substituted olive oil for butter. Will definitely make again. Thanks for a great recipe!

Overnight Blueberry French Toast

So yummy! Used less cream cheese, more fresh blueberries. Will experiment with other fruit - strawberries, raspberries, blackberries, banannas. Also thinking banannas with peanut butter substituted for cream cheese. Possibilities are endless! Thanks for this great recipe!

Lentil Soup

Delicious! I'm sure it would have been great as written, but I did make some changes based on ingredients I had on hand and personal taste. I cut the olive oil to just a couple tbs. Didn't have celery so added some celery seeds. Used half chicken broth & half water. Used kale instead of spinach. Added some diced yams and some hot Italian chicken sausage. Tasted while cooking and it was already so good I didn't see how it could get any better, so I didn't add the vinegar. I also didn't need to add any salt, I think due to the chicken broth and spicy sausage. I will definitely be making this again, and again!

Bowties with Italian Sausage in a Cream Basil Sauce

Very tasty!! Followed the recipe except grilled the sausage on the BBQ along with zuchinni and red and green bell peppers. Then chopped sausage and veggies and added to the sauce with pasta. Worked out perfectly since I boiled the pasta and made the sauce while my husband grilled. We used hot italian sausage, but will try a different sausage next time, just for variety.

Loved this! Didn't peel veggies or puree and used powdered ginger and green lentiles. Will def be making this again, and again. Thanks for a wonderful recipe :-)
