Green Chile Frittata

Angel Chicken Pasta

My family loves this dish. I use cream of celery soup instead of the mushroom and have used chicken breasts, tenders and even canned chicken when I was in a big hurry. Love it.

Spicy Korean Slow Cooked Chicken (Dhak Dori Tang)

I thought this was fantastic but my husband found it too spicy even though I omitted the hot sauce. Too much crushed red pepper for him. I had to make him some bacon and eggs. I'll make it again, cutting the red pepper down and just add hot chili paste to mine when served.

Peanut Butter Pie VIII

Microwave Oven Peanut Brittle

This is the first time I've made peanut brittle and it was wonderful. I didn't have any of the troubles, like a burnt taste, that other posters mentioned. I followed the recipe exactly and am thrilled with the end product.

Black Bean and Cucumber Salad

I was looking for something to do with the abundance of tomatoes and lemon cucumbers from my garden. This is great. Even my husband who doesn't like cucumbers or tomatoes liked it. He & my 8 year old granddaughter asked for a serving in their lunch the next day. 2 Cups seeded and chopped cucumbers and 1 Cup seeded and chopped tomatoes. Any sweet onion will do, I used Vidalia but Walla Walla would be good too.

Yellow Squash Casserole

This was a hit with my family and when I made it the second time I added a 4 oz. can of diced green chili's which made it a bigger hit. I had more squash from our garden than I knew what to do with so I made up this recipe, packed it in small tins with lids from the dollar store and put them in the freezer. Now we'll have it all winter too.
