Wild Rice Stuffed Squash

This is the BEST stuffed squash recipe in my opinion. I always add a chub of ground pork sausage to mine as well. The flavor combo is fantastic! Also, adding the sausage allows you to have more filling, which means you can make more stuffed squash...or just eat the leftover filling on it's own.

Fettuccine Primavera

This was a very good recipe, and very versatile. You can essentially use any fresh vegetables you have on hand. I used shrimp in my version instead of chicken, and the family loved it! One thing I would do next time is use fresh basil instead of the dried thyme. I think it would lend a better "primavera" flavor to the dish.

Slow Cooked Corned Beef for Sandwiches

WOW! That's all I can say about this recipe. Super simple, and it is the BEST corned beef recipe hands down. Followed the directions exactly, except I used about 6-8 cloves of garlic and not the whole bulb. There is no other recipe I will use on St. Patrick's Day ever again!

Kalua Pork

This recipe is absolutely fabulous! Like many others, I put all the ingredients in the crock pot on a work day, and come home 10 hours later to a delicious and ready dinner! I use pork tenderloin because it's the only cut of pork I usually keep on hand, and it turns out beautifully. I too use a bit less salt than the recipe calls for, but it is supposed to be a bit on the salty side...that's what Kalua Pork is! We always eat this pork on Hawaiian sweet rolls topped with coleslaw, bbq sauce and crispy fried onions. Delicious!

Cumin Vinaigrette

LOVE this recipe! I whip up a batch everytime I have taco salad, and the flavor is wonderful! I am not a fan of sweet flavors in my salad dressing, so I omit the sugar altogether. This recipe is definitely a keeper!

Fourth of July Cheesecake

This is the simplest cheesecake I've ever made, and yet I get some of the best compliments when I bring it to summer parties! One tip: refrigerate the cheesecake with the cookie cutters still in tact. That way when you remove them later, the sauce won't run into your pretty star-shaped cutouts.

World's Best Lasagna

Oh my goodness, this recipe lives up to it's name!! I have made this recipe a few times now, and I always get high praise for it. I pretty much followed the recipe, but with a couple of small changes as suggested by other reviewers. I always add 1/2 tsp. of ground cinnamon to the sauce. It sounds odd, but boy it makes an incredible difference! Adds just a hint of smoky flavor to the sauce. Also, don't boil the noodles beforehand. It's a waste of time. Soak the noodles in hot water while you're making the sauce. They will finish cooking in the oven. LOVE, LOVE, LOVE this lasagna!!
