Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Fixed this for dinner tonight.. Avocados at market were hard as a rock, so I decided to substitute with strawberries. Very nice. I microwaved the kale for 1 minute to soften it up just a little bit; perfect! The only other thing I did was add sunflower seeds to add a little crunch. Definitely a keeper!

Kale and Quinoa Salad

This was my first time using Kale. I have fixed quinoa before but my family didn't like it. Last night; they loved it! I bought the Kale from BJ's and it was already cleaned, cut and the spine removed. I wilted the Kale in a steamer basket, cooled it, and then added the dressing and the quinoa. I didn't let the quinoa cool, which really melted the kale. I know that the kale was not supposed to be that wilted, but it was delicious. I used walnuts as I didn't have pecans, and it was great. Had the leftovers for lunch the next day!

Rich and Simple French Onion Soup

Wonderfully simple and delicious soup. I did tweak it a bit or else it would have gotten 5 stars. Reduced the thyme amount, added some garlic powder and a splash or Worcestershire sauce.

Cilantro Jalapeno Pesto with Lime

I fixed this tonight to have on rigatoni. It was very good. I used an entire seeded jalapeno, but otherwise didn't change a thing. We like spicy food, so I could have used a second jalapeno.

Thai Green Curry Chicken

This was a nice curry dish, but could have been a little hotter for our tastes. I used red curry as that is what I had, and added chopped peeled eggplant and chopped red pepper when I added the onion and garlic. I did not use ginger, as I don't care for it. I would absolutely fix this again!

15-Year-Old Pesto Sauce

I have made fresh pesto many times, and this is the first time I saw the suggestion to use nutmeg. It really took it up a notch. I don't think you need so much olive oil though. I blend everything but the olive oil in the food processor, and then slowly add the oil until it is the right consistency. Toast the pine nuts first!

Jimmy the Saint's Sausage and Pepper Sauce

This was a great recipe. I added fresh herbs as I grow them, and didn't have sweet vermouth so used a blush zinfandel, but really didn't stray from the original posted recipe. (didn't add MSG either)You must use anchovies, it makes all the difference! My entire family loved, loved,loved it. Thanks
