Homemade Black Bean Veggie Burgers

Reviewed: Oct. 24, 2011
This came out watery (about the consistency of something you could mix into black bean soup). had to add more than twice the amount of beans, extra breadcrumbs and still had to stir in a rice/quinoa/cheese mixture that I blended in the food processor first to get it even close to holding a patty shape. And even now it's not quite right. A big waste since I added so many more ingredients

Kickin' Collard Greens

Reviewed: May 24, 2010
This is a basic greens recipe. Cut the leaves of the greens off of the tough stems to make them more tender (this should decrease your cooking time) but if you leave the stems on, just make sure you cook them until they're nice and tender. I can get by with about a cup of broth, not 3. Also, the red pepper intensifies in flavor while the greens cook, so a little goes a long way. Serve with Tabasco sauce and vinegar for a really yummy treat. And as a side note, you can make them vegetarian by omitting the bacon and using vegetable broth instead of chicken broth, still delicious, and healthier too!

Sweet Potato Bread II

Reviewed: Oct. 1, 2009
I usually try to make recipes exactly as written the first time, but I used only 1 1/2 C sugar for this one. Since I was modifying, I used applesauce in lieu of oil as well. It was perfect and I'm glad I didn't use the full amount of sugar, I could even see cutting back to 1C. I think it would be great with whole wheat flour as well and will try that next time. The blend of spices is just perfect an not too strong even for my young kids.

Debdoozie's Blue Ribbon Chili

Reviewed: Sep. 10, 2009
the way a person likes thier chili is very different from one individual to another, I think. But this is a great simple recipe. I've made lots of chili recipes, and I find the complicated ones just aren't worth the time at all. The only thing lacking is diced tomatoes, but I made the recipe exactly - figuring I could change it once I tasted it. But it doesn't need any changes, I really like it without the tomatoes. I used Pace salsa (will try a better brand next time, I'm not a fan of Pace, but figured I should stick to the recipe) and McCormick Chili seasoning. I'll be making this in the crock pot frequently this winter!

Amber's Sesame Chicken

Reviewed: Jul. 6, 2009
very good, but I made twice and liked it better with some changes I made. Coat the chicken pieces in a mixture of cornstarch/flour, it's crunchier that way and won't get soggy when you add the sauce. I don't bother with the onions and peppers, it doesn't add much to the dish and my kids won't eat it that way. Double the sauce, but not the sesame seeds. And I think the chicken will soak up all the sauce no matter how much you make, so I will make extra to serve on the side next time. And I don't have 5 spice blend so I used a bottle of teriyaki sauce, it was already pretty seasoned. The dish was very salty, so I would try watering down the sauce with chicken broth, but that depends on the type of teriyaki sauce you choose to use.

Clark's Quiche

Reviewed: Dec. 17, 2008
This is a wonderful dish! It works with a can of evaporated milk also, which is something I always have on hand, unlike cream. I recommend adding a little salt to the spinach/sour cream mixture and that's it. The cheese and bacon make the rest salty enough.

Sesame Noodles

Reviewed: Nov. 7, 2008
these are wonderful noodles, basic yes, but you should be able to see that from the recipe. These are great with chicken and veggies added also. The sauce is a bit watery, so add cornstarch, or just make less of it. Also, I don't have safflower oil, but regular olive oil worked fine(I used much less) I did sprinkle with sesame oil at the end too.

Playgroup Granola Bars

Reviewed: Sep. 10, 2008
these were great, I loved them but was surprised that all 3 of my kids and husband liked them too! I will make frequently. I eat these before I even run for energy and it works great. I used steel cut oats as per another reviewer and it was fine. Add any kind of trail mix to them! The best trail mix I've tried to far is the Archer Farms brand "Monster Mix" from Target

Ninety Minute Cinnamon Rolls

Reviewed: Apr. 18, 2007
the first time cinnamon rolls have turned out for me! I've made them at least a dozen times already! I prefer to bake them in a regular pan, not muffin tins, they keep a better shape that way. And they don't take me much longer 90 minutes!!! Love them!!

Sweet and Sour Sauce I

Reviewed: Apr. 18, 2007
great sauce! Make it as written, then adjust as you need to, I ended up adding more ketchup and soy sauce in equal amounts. I think it's better for a dish, not as much as a dipping sauce.

Jay's Signature Pizza Crust

Reviewed: Feb. 16, 2007
I've been making this crust for about 2 years now and it's the best! makes 2 pizzas, you have to pre-bake the crust before topping it or it turns out soggy. (I'll be trying it on a pizza stone soon) It's great with seasonings added to it, but I leave it plain so the kids will eat it and it's still awesome!

Caramel Popcorn

I love this stuff! I bake it a little less because I like it to stay a little chewy, and not turn all the way crunchy!!! YUM!

Country Quiche

Reviewed: Jun. 22, 2006
I tired this recipe because I didn't have cream or evaporated milk to make my normal quiche recipes, and I'm not sure what I could have done to mess up such a simple recipe, but there wasn't nearly enough filling in this... I would have to double it to fill the pie crust, and it wasn't a deep dish pie shell... the filling wasn't nice and light and fluffy like normal either...

Egg Fried Rice

Reviewed: Mar. 29, 2006
my fave for fried rice! Cooking the rice in the soy sauce is the touch I wanted, rather than just adding it at the end. Use any veggies you like (I've never made with green beans) it's great with anything, even adding pork or chicken works out great!

Sweet and Sour Pork I

Reviewed: Mar. 29, 2006
a great recipe, I used the syrup from the can of pineapple instead of plum sauce. But no major changes needed. I will make with chicken next time, but that really is just personal preference, nothing to do with the recipe itself! it was a lot of work, but tastes good so it's worth it as long as you have the time.

African Curry

Reviewed: Jan. 10, 2006
great recipe, I tried this one becasue it didn't use any strange ingredients, I had everything in my pantry already. I added tons more curry, but I understand the regular grocery store variety is not the best to use. It tasted great! I only used half the coconut milk, becasue it got really soupy, not sure if that was my mistake or not.

Chicken Veggie Stir Fry

Reviewed: Jan. 10, 2006
there's nothing bad to be said about this recipe, but it's not great either. It's rather like fried rice, only I've had much better recipes for fried rice. I would not bother with the flavor packet from the ramen, who needs the MSG?? you can't taste it anyways, the soy sauce is a much stronger taste (and better tasting, too). It is very quick and easy, even my picky 5 year old ate it, so it can't be bad. Try it with frozen stir fry veggies, if you don't have fresh.

Chocolate Cavity Maker Cake

Reviewed: Aug. 30, 2004
Had no liqueur in the house so I used some really strong brewed coffee and it worked out fine. I would think you could maybe even leave ths out altogether, but I haven't tried that. Unlike some reviews, I liked the chocolate chips in it, although I think I used less than the recipe called for (it's all I had), but I think you could make this with or without the chocolate chips.
