Quick Tuna Salad

I add one boiled egg, 1/4 pickle and one heaping tablespoon of healthy mayo per one can of tuna, plus a splash of pickle juice.

Green Tea Cheesecake

I made a couple changes. The green tea powder at my local store was $8.99. Too rich for my blood, but they had a sweet green tea powder for $4.99. All it is, is green tea powder and sugar. It was over 1/2 cup worth, so I just added regular sugar to fill out the rest of the 3/4 cups total. I also used non-reduced fat cream cheese.

Cream Cheese Frosting II

Delicious! Only con is it may be too sweet/delicious for your cake. I tried it with a new red velvet recipe i had. It far over-shadowed the taste of the cake.

Red Velvet Cake I

I used the following subs; oil instead of shortening, 1 oz red food coloring and 4 tbsp of cocoa powder. After cooking the cake for 30 minutes, the middle was still liquid. I cooked it for another 10 minutes and the toothpick still came out wet. Another five minutes and the cake was done. I use the cream cheese frosting II after the cake cooled. I've never had red velvet cake before but am experienced at making cakes. The frosting was delicious buy practically over-whelmed the cake flavor. I tried the cake later, without the frosting and it didn't taste like anything special. It wasn't dry but it wasn't moist as others claim. I just don't see what all the fuss is about.

Tuscan Soup

This soup is great! I made two small variations. I used hot turkey italian sausage instead of regular. I also bought a garlic and cheese focaccia, baked it for 10 minutes at 350 degrees, cut it up and placed it in the bottom of the soup bowl, poured the soup on top and let it sit for about five minutes. DELICIOUS!

Egg Salad I

I tried the user recommended 3 tablespoons of mayo, (i used smart balance for a healthier version) 1 tablespoon of mustard (any type), omit onion, add pickle (i chopped up half of a small pickle for a 3 serving recipe) and omitted the paprika. I also used fresh ground pepper and sea salt to taste. Not bad! I'll probably use a little less dill next time.
