Creamy Squash Soup

Reviewed: Jan. 2, 2011
Wow great soup. First attempt with squash and it was awesome. I roasted both an acorn and butternut squash and used a combination of both. I did dollop some sour cream but don't think it really needs it.

Chocolate Chip Bread II

Reviewed: Dec. 12, 2010
So I don't know what happened but the bread did not cook in the middle. Is there something wrong with my bread machine. I just made a different loaf of bread earlier today and it came out perfect. Any suggestions? The part of the bread that was cooked was delicious.

Milk Bread

Reviewed: Nov. 21, 2010
This is definitely my go to bread recipe. However, I like the texture when I use bread flour instead of all purpose. I also need to add a bit of olive oil in the machine once the ball starts forming.

Big E's BBQ Rub

Reviewed: Mar. 22, 2010
This was a great rub. I had some pork butt bone in ribs that I left the rub on all day. I did use a little less salt because of another review made. Probably about 1/2 tbsp. I also then put a little Sweet Baby Rays BBQ Sauce on the ribs. I had to do the ribs in the oven because of Erie PA weather. I cooked them on 250 degrees for 3 hrs, took them out and then put the BBQ sauce on them for at least 30 minutes. They turned out great!

My Mother's Pancakes

Reviewed: Mar. 13, 2010
The recipe does state to add flour a 1/2 cup at a time until you reach your desired thickness. I added about 1 1/3 cups of flour. I also added 1 tsp of salt to bring out the flavors. That might be why some reviewers found there pancakes to be bland. I used 1 tsp of vanilla and a shake or two of cinnamon. They turned out great. I only rated three stars because I had to spice it up a bit.
