Gourmet Mushroom Risotto

Follow this receipe and you'll make the greatest risotto ever! My wife doesn't ike mushrooms so I've experimented with other veggies or just exclude veggies altogether. Starting with the Shallot though, is a must!

Boilermaker Tailgate Chili

By FAR, the best Chili I've ever tasted. ridiculously good and the leftovers taste even better. I suggest that you make the full recipe because you'll absolutely love it and wish you had leftovers. The only substitute I made was to use ground turkey instead of chuck to lower the fat content. When you cook something this long, with so much flavor, you can't tell it's not beef. I did use the Italian pork sausage but went with about 3/4 lb instead of the full pound, again to lessen the fat content. Oh, I also omitted the bacon bits. I used a Dutch oven instead of a large stock pot. Will make again soon!

Italian Spaghetti Sauce with Meatballs

My wife has been making fantastic meatballs for years so I tried this recipe to see if it gave hers a run for it's money. I was very dissapointed by the meatballs and the sauce. 1st of all, the bread crumbs are way to much unless you're looking for the consistency of meatloaf. I'd suggest using a 1/4 cup of bread crumbs per pound of meat. 2nd, the meatballs need to be browned before dropping raw meat into the sauce. Most of the recipes I've tried with this many 4.5 star reviews have been fantastic. I'll pass on this one.
