Awesome and Easy Creamy Corn Casserole

I've made this several times and it always gets rave reviews. I use Jiffy Corn Muffin Mix because it's a bit sweeter than traditional corn bread mixes. I also use fat free or light sour cream, depending on what I have. And, I completely omit the butter and it always comes out great. Depending on the crowd, I sometimes add minced sweet onions and/or red peppers.

Spicy Rapid Roast Chicken

This turned out awesome. I quadrupled the spices and added a tsp of garlic powder. I also used about 2 TBSP of olive oil. I rubbed down the entire outside of the bird, the inside cavity, and under the skin on the breast meat. It turned out so moist and yummy. My bird was about 4.5 lb and it took about 30 min. extra to cook but I never did cover it. Perfect.

Beef Stew VI

This was great....I think the rosemary really enhanced the flavor a lot. Changes I made....I only used 1 TBSP of oil, used 2 tsp of fresh parsley (because I had some I needed to use), added 1 tsp of garlic powder and two bay leaves, and used potato flakes instead of cornstarch to thicken. It was wonderful. My husband ate some before I even thickened it. I have to say just the meat cooking was enough to make your mouth water - it smelled so good. Thanks for the recipe.

Exquisite Pizza Sauce

I LOVE this sauce recipe. It is super cheap and easy to make and it tastes great. I really like that you don't have to simmer it down at all. I did alter the recipe by cutting the honey down to one TBSP and since I have little ones, I also did NOT add the cayenne & red pepper flakes at all and cut the black pepper to 1/8 tsp. I actually easily make one X-large pizza and one small pizza with this recipe. It's the best one I've ever come across - I doubt I'll ever try another.
