Crispy Rosemary Chicken and Fries

I've made this twice, and the first time was good, but the second time where I used the Yukon golds like someone here suggested and basted the chicken at the 45 minute mark...oh wow. This dinner just makes me happy. Really easy, really tasty, and kinda fancy looking :)

Pesto Chicken Penne Casserole

This is really really GOOD. We baked the chicken in some olive oil and shook some Italian seasoning over it. I'm sure plain chicken works with this recipe, but I think the coating made it tastier.

Sloppy Joe Sandwiches

I dove headlong into this recipe. I doubled it, and realized I didn't have enough ketchup; spaghetti sauce rounded out the rest, probably a half and half mix. I had no brown sugar, Worcestershire sauce. or salt, but had everything else. I used spicy brown mustard. and simmered it just for 10 minutes, and it came out awesome.

Curried Honey Mustard Chicken

Really really REALLY good dish! I just might add a little more curry powder or even cayenne to the mix next time. I really enjoy spicy food!

Chicken Salad with Toasted Almonds

Way, way, WAY too much mayonnaise in this recipe, and I think I made a mistake in using the pre-packaged, pre-cooked chicken. The dish was really salty. I added a lot of lemon juice and a lot more grapes (because I didn't want to use the pineapple), and I think it turned out just all right after that. I might add some celery ribs to the mix next time I make this.

Fire-Roasted Tomato and Spinach Pasta

OK, this pasta recipe is still awesome even with these mistakes: I used fire-roasted tomatoes used for chili, which had minced jalepeno in the sauce. I dumped in a whole box of spaghetti and THEN read the dish called for just 6 ounces of it. I couldn't find creamed spinach and so used chopped instead The result is spaghetti with chunks of tomato and spinach and it was really good, and even better the second day around. I will certainly try this recipe again, if only to see what happens when I actually follow the directions. :)
