Beef Tenderloin Stuffed with Lobster

Warning!... if you love lobster, this recipe is NOT for you. I was SO disappointed in this recipe, and consider it one of the worst recipes I've ever tried. The taste of the lobster is completely lost in this dish, and the tenderloin is overcooked. Considering the cost of preparing this dish, you'll be MUCH better off cooking them separately to each guest's specifications!

Oven Kalua Pork

I recently made this for a party, and it was a HUGE hit. I've been waiting for months to try a Kalua pork recipe, having visited Hawaii and had real Kalua pork. This recipe is delicious and perfect for a crowd or party - as it makes a lot of food with minimal effort! I did make modifications based on other reviewers suggestions, and have prepared this two different ways. This recipe is best in the oven, NOT a slow cooker - the oven method was much more tender and flavorful. I did make modifications, which I think added tothe recipe. My modifications were as follows: 3 T. minced garlic, 1 T. minced ginger AND increased the Liquid Smoke to 2 T. The additional Liquid Smoke really makes this recipe pop! I will definitely be making this again and again! Several people asked for the recipe. I've tried this both ways - once wrapped with tinfoil (the BEST!) and once wrapped with banana leaves. Both were very, very good. You can't go wrong with this one with the modifications. Be SURE to use Hawaiian Sea Salt... it makes all the difference!

Blackened Salmon Fillets

Phenomenal recipe. The BEST tasting blackened salmon I've ever had. I won't buy it in a restaurant any more with this recipe! For reviewers that had cooking and smoking problems... TURN DOWN THE HEAT! I cooked these on low-medium (with a covered lid), and had zero issues with smoking. Turned out perfectly. Extremely spicy and fabulous. For an extra special dinner and great presentation, serve blackened salmon on top of a Cajun Pasta with cream sauce with red pepper flakes. Add green pepper, jalapenos, red onions - fabulous!

Feta and Sun-Dried Tomato Stuffed Chicken

Delish! I used the kalamata olives per the recipe (even though they are optional). This was absolutely delicious, and definitely company-worthy. I will admit I added some crumbled crispy bacon to the mix - it added some real snap to the recipe! Who doesn't love bacon? Personally, I will omit (or at least cut down) on the red pepper next time. I felt it was overpowering with the other really fantastic flavors in this recipe. Definitely a keeper. 5 out of 5 stars. Thanks for the great recipe! I will put it on our rotation. Super easy and pretty too!

Zucchini Skins

This was absolutely delicious. My guess is the poor reviews come from reviewers overcooking the zucchini during the boiling process - which would cause it to taste soggy as they report. I pre-boiled the water, dropped the zucchini in, boiled them steady for 2 minutes, then turned off the heat and let them sit in the water for the remaining 3. They were perfect!... flexible, yet still firm. Then, I brushed with oil, sprinkled with pepper and put under the broiler 5 minutes. I stuffed each zucchini generously per the directions, and put under the broiler one minute. The topping was browned, the cheese melted, and it was crispy on top, perfectly warm in the middle and the zucchini was perfect. No soggy-ness whatsoever. Fanstastic. What we loved most was that they were a refreshing take on stuffed potato skins without the heaviness of the starch and gritty-ness of potatoes and skins! We gave this a 5 out of 5. This is a definite keeper. Love it, and thanks for the recipe!

Kelli's Baked Halibut

I'm sorry, but this recipe was awful. I followed the recipe exactly as written, and both my husband and I thought it was waste of good halibut. I'm an excellent cook and although I was skeptical about the ingredients, I followed the recipe exactly since it was the 1st time I made it. The recipe calls for way too many cracker crumbs, and the salad dressing is overpowering, so you don't taste the halibut. In addition, the spices as "to taste", which is difficult to tell how much to add when you have so many cracker crumbs! As a result, we scraped off the entire topping from the fish and ate it without any of the coating. The coating didn't cook well in our experience - despite the fact we cooked it 20 mins longer than recommended. Sorry, I don't recommend this and we won't be having it again.

Dave's Low Country Boil

YUM! If you want to overeat - this is the recipe for it! DH and I made this tonight (we cut the recipe in half since it was just two of us), and we ate nearly all of it. Absolutely delicious! We had a great time making this together, as the preparation is fun, and can be done by several people. Also, it is fun, interactive eating as you dump it on the table, crack the crab, etc. Makes great dinner conversation and a real relationship with your food! The only thing I did differently was I added a pound of fresh clams (more shelling!), and 2 tablespoons of garlic (for our personal taste). Warning!... this is a two-hour nap recipe. When you wake up, you'll still be full... in a good way! :-) For those of you that were confused by the recipe because it doesn't specify, I used 6 quarts of water, and 6 ounces of Old Bay Seasoning (an entire 6 oz. container), so that all ingredients in the recipe were entirely covered). The other thing I would do next time is put the potatoes in later - they got a little too mushy for our tastes! Enjoy and bon appetit'! This is a great one all around. Three cheers for interactive eating!

Southern Fried Chicken

AWESOME Chicken - thanks Cindy!!! We absolutely loved this. I took the advice of other readers and added 1 tsp garlic powder, 1 tsp onion powder and 1 tsp ground red pepper (cayenne), and it made an AWESOME addition. Also, I did soak the chicken in ice cold water for 20 minutes and it worked!... there were NO veins near the bone. Thanks for the advice - we will definitely be making this again!

Big Ed's Cajun Shrimp Soup

Y-U-M! DOUBLE THE RECIPE! Thanks Big Ed for an AWESOME recipe. Readers, I made quite a few recommendations, but not because the soup needed it - it was for personal preference only. This is a 5* soup as it stands. I added 1/2 chopped red pepper (which I happened to have on hand), AT LEAST 2 T. red pepper flakes, 2 tilapia filets, 4 chopped green onions, at least 1 T. Old Bay Seasoning, Seafood Seasoning was added to my tilapia filets, 3 stalks of celery, 1 T. garlic and I also used SPICY V8 juice. And, lots of Tobasco! We like things HOT, and this did not disappoint with my changes. I also pumped up the volume on all spices. I typically don't like when people modify recipes - but we did it to satisfy our particular taste. Ed's soup is a FANTASTIC recipe - we just customized it for us.

Pepperoncini Beef

Delicious! 9.5 out of 10 stars! We loved the flavor. We prepped the sandwiches topped with fresh, raw onions, more pepperoncinis (NOT the pepperoncinis that were in the crockpot), and provolone cheese melted on top under the broiler. For condiments, we took another reviewers suggestion and served with a half-and-half sour cream/hot horseradish mix. Phenomenal!... we loved it. Definitely a keeper. Corn Dogs

Yum! I'm way to old to be craving corn dogs, but my appetite got the best of me and I craved a corn dog for 3 days. With no local fairs planned for a few months, I tried this recipe. PERFECT!!! Delicious and just the right amount of batter. A few tips: (1) Dry the hotdogs using paper towels prior to dipping to remove all moisture, (2) make sure the oil is not to hot, (3) pour the batter into a tall glass prior to dipping, which will give it that perfect corn dog shape! I have a gas stove, and these were done in 4 minutes (and the batter was done and the hot dog hot!), but your mileage may vary. We used Johnsonville Cheddar Cheese & Jalapeno Sausages, and they were AWESOME. Fun, easy to make, and tastes better than any corn dog you can buy.

Feta Cheese and Bacon Stuffed Breasts

Absolutely fabulous - we loved it! I only made two chicken breasts and did not half the other ingredients. I left them as written, although I did use a tablespoon of minced garlic because we love garlic. This was so mouthwateringly good, we are marking it as a good recipe to serve for guests. YUM! I was so pleased the cooking time was spot on - that rarely happens, so I was thrilled! 10*'s

The Best Rolled Sugar Cookies

Individual Baked Eggs

YUM, absolutely delicious. I did modify the recipe somewhat. I didn't use the butter, and opted to use non-stick spray instead. It worked GREAT! and they popped out of the muffin tin just fine. I also placed a one half slice of ham in the bottom! Tasted sort of like an egg-mcmuffin without the carbs from the bread! We topped it with Tabasco sauce. The hubby thought it was a 10* recipe! So did I. Very, very good - thanks for the great idea!

Bermuda Fish Chowder

Very good iced tea! Nice change to plain iced tea, this recipe gives just enough sweetness without being over-powering. I agree with other reviewers, you can experiment with this recipe and try other juices. It's still outstanding! Thanks for a great recipe!

There is only one way to say it... phe·nom·e·nal!!! I loved this. Made a few modifications, and it was still DELICIOUS! I used Halibut instead of Cod, substituted clams for mussels (not a fan), and added a lot of extra spices - including seasalt and heavy cracked pepper. Served with a crusty green olive loaf of bread, and it was a 10+++. No kidding - try this - we will definitely make this again! :-)

Grilled Swordfish with Rosemary

I was very excited to try this new recipe for Swordfish. I don't know what I did wrong (as I followed the recipe to a T); however, it was bland and horrible. Maybe my Swordfish steaks were too thick - but this absolutely did not work for me.
