Beef Tenderloin Stuffed with Lobster

Reviewed: Jan. 11, 2002
Warning!... if you love lobster, this recipe is NOT for you. I was SO disappointed in this recipe, and consider it one of the worst recipes I've ever tried. The taste of the lobster is completely lost in this dish, and the tenderloin is overcooked. Considering the cost of preparing this dish, you'll be MUCH better off cooking them separately to each guest's specifications!

Burrito Pie

Very bland taste with no texture. If you like this type of dish, I'd recommend making enchiladas or something that has some flavor to it!

Baked Salmon II

Reviewed: May 28, 2002
This was my first attempt at cooking salmon - either in the oven, or on the barbeque. It turned out absolutely perfect and was delicious. My husband and I will definitely be trying this recipe again. Great also for company.

Louisiana Shrimp Creole II

Reviewed: May 29, 2002
My husband and I loved it. Great recipe, very easy to make, and tasty, tasty, tasty! If you like spicy, you might want to add red pepper flakes, but it isn't necessary, because this recipe is VERY flavorful!

Autumn Cheesecake

Reviewed: May 29, 2002
Absolutely, by far, the best cheesecake ever. I invited friends over for dinner the other night, and they sheepishly asked if they could "request" the dessert menu - which happened to be this recipe!! They loved it so much the first time I made it, they asked if I would make it for them again! An absolute winner - bar none. A+++

Barbequed Marinated Flank Steak

Reviewed: Jun. 3, 2002
This is a FANTASTIC recipe. I am not typically a fan of sweet meat, but the marinade for this recipe really delivers. The flank steak grills beautifully (great color!), and the taste is mouthwatering. We had guests over for this one (first time we'd cooked it - ever), and it was an absolute hit!... they not only took seconds but demanded the recipe! A+

Beer Butt Chicken

Reviewed: Jun. 3, 2002
FANTASTIC! This was by far one of the juiciest, most flavorful chickens I had ever tasted, and the VERY first time I'd ever put a beer up a chicken's butt - I promise! :) This recipe is easy and FUN to make, and turns the chicken skin golden brown and delicious. I made it for guests the first time for an outdoor bbq, and it was not only mouth-watering delicious, but made for great party conversation. My guests said I had found the secret to the Colonel's secret recipe! Everyone fought over the skin and demanded the recipe. PERFECT!

Best Bruschetta Ever

Loved this recipe - very, very garlicky. I think the trick is to use fresh herbs - it makes the flavor much stronger. My guests ate every last bite!

Grilled Swordfish with Rosemary

Reviewed: Aug. 20, 2002
I was very excited to try this new recipe for Swordfish. I don't know what I did wrong (as I followed the recipe to a T); however, it was bland and horrible. Maybe my Swordfish steaks were too thick - but this absolutely did not work for me.

Mahi Mahi with Onions and Mushrooms

Reviewed: Mar. 9, 2005
The recipe was simple to make and had easy ingredients that I had on hand, but even following the recipe exactly as is, both my husband and I thought it was fairly bland. In addition Mahi Mahi typically has a very good flavor, and the onions overpowered the flavor somewhat - and we are huge onion and garlic fans! My husband and I rate recipes 1-10 (10=best), and we only keep recipes to repeat if they are 8 or above. This one rated a 7 to a 7 1/2, so we will only remake it if it's the only ingredients we have in the fridge for a white fish preparation!

Southern Fried Chicken

Reviewed: Oct. 17, 2005
AWESOME Chicken - thanks Cindy!!! We absolutely loved this. I took the advice of other readers and added 1 tsp garlic powder, 1 tsp onion powder and 1 tsp ground red pepper (cayenne), and it made an AWESOME addition. Also, I did soak the chicken in ice cold water for 20 minutes and it worked!... there were NO veins near the bone. Thanks for the advice - we will definitely be making this again!

Kelli's Baked Halibut

Reviewed: Feb. 16, 2006
I'm sorry, but this recipe was awful. I followed the recipe exactly as written, and both my husband and I thought it was waste of good halibut. I'm an excellent cook and although I was skeptical about the ingredients, I followed the recipe exactly since it was the 1st time I made it. The recipe calls for way too many cracker crumbs, and the salad dressing is overpowering, so you don't taste the halibut. In addition, the spices as "to taste", which is difficult to tell how much to add when you have so many cracker crumbs! As a result, we scraped off the entire topping from the fish and ate it without any of the coating. The coating didn't cook well in our experience - despite the fact we cooked it 20 mins longer than recommended. Sorry, I don't recommend this and we won't be having it again.

Blue Cheese Potato Salad

Reviewed: Oct. 2, 2007
This potato salad is AWESOME! Both my husband and I loved it. Like all the other reviewers suggestion, I cut the olive oil in half, and it was perfect! I also did use 4 oz. container of blue cheese, and the flavor was perfect. LOVE IT and will definitely make it again.

Fish Tacos

Reviewed: Oct. 9, 2007
FANTASTIC! We absolutely ADORE this recipe. Next time, I will use sour cream instead of yogurt so it isn't quite so 'tangy', and I will also use broiled fish, not fried (just for personal preference). This sauce is to die for!!! I'm going to make it for other recipes. For the extra spicy minded, I added (1) additional chopped jalapeno, (1) additional tsp. of capers, and approx. 1/4 cup of chipotle sauce. AWESOME!!! Definitely a keeper and family favorite!

Tzatziki Sauce I

Reviewed: Oct. 14, 2007
Very, very good. I did add shredded cucumbers, and extra dill, and it was delicious. The key to this recipe is using Greek yogurt... it's creamier and richer than regular plain yogurt.
