Slow Cooker Beef Pot Roast

Very good - I did modify it a bit - I left out the mushrooms and carrots because I didn't have any on hand. And I used a boneless cut and dried herbs. But it was very tasty and a big hit with the family. I strained the juices and thickened them a bit with a flour/milk mixture to make gravy and served with mashed potatoes.

Sweet, Sticky and Spicy Chicken

It was very good. I halved the hot sauce and it was still a little too much for my family. I doubled the sauce. I dredged the chicken in a flour/cornstarch mixture with a little salt and pepper (I omitted the s&p from the sauce) and it thickened up very nicely. Will definitely make it again. Oh, and added some sliced carrots. Broccoli would be good too.

Seasoning For Tacos

I have used this recipe several times and it's now the only seasoning we use for tacos. I don't think I could go back to the prepackaged mix. It's simple and easy to make - my kids (6 and 8) love making this recipe. We make a double batch and store it in an old spice jar. Perfect.

Chocolate Zucchini Muffins

Made just a few minor changes - I cut the oil to 3/4 cup and doubled the cinnamon because I didn't have cardamom. Very good. This is the second time I've made these and I have a request for more. Tasty way to use up some of that zucchini.

Cheddar Spirals

It was pretty good. I did make a few substitutions/additions. I used elbow macaroni instead of spiral and 2% milk instead of half-and-half. I only had 2 cups of sharp cheddar, so I used 2 cups of Colby too. At other reviewer's suggestions, I added a bit of dry mustard and Worcestershire sauce, but apparently not enough because it was on the bland side. I also needed to add salt and pepper when it was on my plate. The kids balked at eating it because it wasn't the mac 'n cheese from the blue box, but once my son (3) tasted it, he liked it. I did love how easily it came together (I love easy prep meals!) and will probably make it again with a bit more spices/flavors.

Black Bean Rice Burgers

Love them. I've made these several times over the past year. I make a batch and they keep in the fridge for about a week (but they're often gone sooner). Reheat them in the microwave for a quick lunch. My daughter loves them too, but no one else in the family.

Sean's Falafel and Cucumber Sauce

I thought they were great. I did bake them instead of frying them. The cuke sauce was excellent. Unfortunately, neither hubby nor the kids really liked them, so I probably won't make it again for the family.

Black Bean and Corn Quesadillas

I thought they were great - tasty and filling. I subbed sharp cheddar for the monterey jack, just because that's what I had. I also added a little sprinkle of chili powder. It was extremely quick and easy - perfect for a hectic weeknight.

Banana Oatmeal Cookies I

These were OK. They are nice and moist and very cake-like. I could definitely taste the spices, but they didn't taste like much else. In the interest of full disclosure, I subbed some applesauce for some butter and added chopped walnuts.

Chicken Marsala

I love chicken marsala, but I did not care for this recipe. I made it as written. I chose this recipe for its simplicity, but I think I'll stick to my mom's more involved (but tastier) recipe from now on.

Basic Flaky Pie Crust

This is the pie crust that my mom and I have been using for YEARS! We don't use any other one. What I do is only mix 1 cup flour in the mixture and use the other 1/4 (and more, if needed) to sprinkle on my rolling surface and the rolling pin. These measurements make enough for 1 8-in pie crust (for me) so I 1.5 the recipe usually for a 9 or 10-in crust. Oh, and I never refrigerate it.

Connie's Zucchini "Crab" Cakes

I made this recipe as written, although I used some frozen shredded zucchini that I had. I drained the zucchini thoroughly and actually had to add just a small bit of water back. I agree with some other reviewers that it was a bit salty, but overall, the recipe was very good. My mother even asked for the recipe. I would make this again.

Peach Muffins

Very good. I made the recipe as written, although I halved it because I only had 1 cup of peaches. I ended up with 18 muffins, but didn't fill them too full because I though they would rise more - they didn't. The batter was thick, but my peaches were pretty ripe and juicy. At 400 degrees, my muffins only took 12 minutes - and even then the bottoms were slightly burned. Next time, I'll fill the cups fuller and lower the temp to 350.

Shepherd's Pie VI

Pretty Good. Made it for dinner tonight and the kids even liked it! I made a few small changes - I mashed the carrots and potatoes together and added a little milk . I added a dash of Worcestershire Sauce to the meat mixture along with peas and chopped carrot. Next time, I'll add a bit more Worcestershire and decrease the number of potatoes. The potato to meat ratio was a little uneven.
