Grandmother's Pound Cake II

This cake is great. I have made it several times. The first time I followed the recipe, except using a bundt pan because this is what I had. It is excellent! Next time added a teaspoon of homemade vanilla extract - even more yummy. Last time, 1 teaspoon of lemon extract and 1/2 teaspoon of vanilla extract - so good. However, this cake is perfect with just the recipe as stated! Classic flavor that you can adjust as you like.

White Chili

I love this recipe! I have used both ground turkey and ground chicken and both work fantastic. I have used 1 cup of canned corn instead of frozen and that works well too. I also add a few more spices (sometimes chili powder, sometimes seasoning salt, sometimes "better than bullion" chicken flavor) With the spices, it's whatever I think I might be in the mood for. Throw it all in the slow cooker and just eat whenever we are ready. I have cooked this on high for 2 hours or on low for 4 - 5 hours. Just brown the meat and add it cooked to the slow cooker. My husband LOVES this recipe and I have started buy canned beans every shopping trip because this has become a weekly meal for us, and I NEVER cooked beans before! Even my kids eat this up which is nice. A really wonderful winter recipe I plan on having lots of fun with all winter long!

Oatmeal Chocolate Chip Muffins

This is really good and I use it as a "base" recipe. I use 1 cup of kefir in place of 1 cup of the milk. I use grape seed oil instead of vegetable oil. I also use whole wheat flour in place of the all purpose flour. Everything still works perfectly with this recipe. I consider a recipe great when it can handle substitutions and this one fit the bill. Also, I can go crazy with mix ins and everything still turns out wonderful (I like to add dried cranberries, raisins, and dried blueberries). I have also used canned crush pineapple as well (about 1/4 cup). Really good base that allows you to have a lot of fun with this recipe.

Potato Soup

Great base, but I gave it four stars because I made a few changes. 1. Instead of mashed potatoes, I just cut up 5 - 6 potatoes in chunks. 2. I added some diced garlic (canned). 3. I added 5 or 6 slices of cooked beef bacon, diced small. 1. I added a few more seasoning. However, the base was really what I needed. I cooked this in a slow cooker on high for 3 hours. Then I took a potato masher and went over it a couple times (leaving most of the potatoes in chunks, but mashing a lot to give it a textured consistency). I then cooked it on low for another 2 hours. The results were amazing and I will definitely be making this recipe a lot this winter!

Quick and Easy Peach Cobbler

I really liked this recipe. It is easy and you can make various substitutions without changing the basics of the recipe. For instance, I will add a bit of vanilla and cinnamon to the batter. I have also tried different types of fruit (like canned pineapple). Sometimes I will use coconut oil in place of the butter. However, the recipe if 5 stars because it is an excellent base to start from and good as written as well.
