Gourmet Mushroom Risotto

Firecracker Scallops

My husband LOVES this dish! I had bought some beautiful (HUGE) sea scallops and some fresh horseradish...I don't know if I'd make it for an entree again though, it's so rich but so tasty...I ate too much! Can't wait to try it for an appetizer!

Tiramisu II

This was SOOOO good. My hubs new favorite. My best friend who used to work at Maggiano's said it was even better than theirs! :) We did put an extra dose of cocoa in between layers and added some Kahlua...YUMMY!

Best Tuna Casserole

This was so tasty. My husband wasn't too excited when I told him what was for dinner, he said he'd eaten tuna and noodles everyway possible. Well, guess who went back for seconds??? :) I also used more mushrooms (b/c we love them), and green beans b/c I thought I had peas but didn't.

Marie's Easy Slow Cooker Pot Roast

I was great. It was very flavorful. I put carrots and cabbage in with the meat (that's how my mom always did it.) I was going to do potatoes too but already had some left over mashed ones. Took some of the "juice" and made gravy. YUMMY!

Chicken Milano

SUPER YUM! I took the advice of other reviewers and dredged my chicken in seasoned flour before cooking. I also realized last moment that I did not have any sun dried tomatos so I used some smoked chipotles. Spicy but SOOOOO good!

Stuffed Cabbage Rolls

My husband loves cabbage in any form so this was definitely a hit. IDK if we need to boil the leaves longer or cook it longer, they were a little tough but still yum! We added crushed red pepper to kick up the spice!

Chicken Enchilada Slow Cooker Soup

Great! I think I'll add more green chilis next time, we like it spicy! I also added a can of black beans this time. Thinking maybe I'll add a can of condensed cheddar cheese soup too b/c we love cheese too! Also, as my husband pointed out, this could be good with beef or pork too!

Sour Cream Chicken Enchiladas

We loved this! Even my brother-in-law, who is not excitable, exclaimed that it was GREAT! I didn't use all of the salsa and that was a mistake though, it wasn't spicy enough for us. I also used Land o Lakes White American cheese b/c thats what our favorite mexican resturant uses and it's wonderful! We also tried it with hamburger and you need to add a little more spice! Keeper!!!!

Zucchini Risotto

I LOVED this...kids didn't even realize there were VEGGIES in the rice! I added more zucchini and will probably add some yellow squash next time too. My husband wasn't thrilled with the sun dried tomatos but I really liked them. :) Definitely a keeper, I'm going to be trying LOTS of variations. ALSO, I was slightly intimidated by ristotto but this was SUPER easy. TRY IT!!!!!!

Beer Cheese Soup III

I used chicken stock instead of bullion and water. Also used a light beer b/c that's all we drink. Added a few more veggies b/c I like the soup chunky. Great soup!

Mom's Delicious Oyster Corn Bread Dressing

I decided to try this with my family who all love seafood. It was a great hit! We served it with our turducken! We all loved it but I think I will have to update after I make it for my husband's family who are not as adventuous. :)
