Pineapple Upside-Down Cake VII

I didn't have white cake mix but I did have Pineapple Supreme. I used the pineapple juice for my liquid and had to add a little water to meet the instructions on the box of cake mix. Everything fit nicely in my grandmother's old 13 inch iron skillet. Delish!

Maybe I just have a sweet tooth but I'll definitely be adding some more sugar next time. The husband doesn't really like sweet things so he ended up loving these.

Red Skinned Potato Salad

Four stars as is. I tried it again with some relish and a small amount of spicy ground mustard and it took it to a whole new level. I also cut back on the onion and celery the second time around. It's all about suiting a recipe to you and your family. I always recommend making the recipe as directed and then adjusting it from there. Regardless, this is a keeper.

Best Ever Meat Loaf

This is my favorite meatloaf and I have tried many. I use whole grain bread from Pepperidge Farm and I think it really adds to it. Sometimes I add red pepper flakes, sometimes I don't. This is a winner!

Jalapeno Popper Spread

I was not crazy about this. I made the glaze and thought it lacked flavor and was very.....odd. I made another glaze using sugar, cornstarch and peach jello mix. Much better and much prettier.
