Tuna Noodle Casserole from Scratch

Great! Delicious comfort food and it was great to avoid all the extra sodium and preservatives from the canned soup. We made it with lowfat milk and whole wheat flour and it came out just perfect.

Roasted Autumn Root Vegetables

Simple BBQ Ribs

Great! My husband had been buying the ribs and frying them in a pan; they were tough and unappealing. This recipe is great! It takes a lot of time, but is SO easy and the results are like restaurant ribs. I did 1 hour boiling and a little over 1 hour in the oven. Next time I might let them soak even longer in the water. I used boneless pork ribs and modified for 1 lb. which was enough for us.

Baked Dijon Salmon

Yummy! I have usually made salmon with just dijon and honey, but the butter sauce and crunchy topping were delicious. I substituted 1 tsp. dried parsley as another reviewer suggested because that's all I had on hand. Also used walnuts in place of pecans because that's what I had. I think it will be even better with pecans. Served with couscous and corn-on-the-cob. Super fast and yummy!

Spinach Quiche with Kid Appeal

Great base recipe! I substituted 2 cups fresh spinach and used Parmesan instead of Pecorino b/c that's what I had. Added 1/4 cup half and half for richness and slightly more cheese (swiss). Used 1/2 tsp. salt, 1/4 tsp. pepper, and 1/2 tsp. thyme (as suggested by others). Filled two 9" pie shells. I added chopped ham to one. Both versions came out great!

Caesar Salad Supreme

Great recipe! I cut the recipe down to 2 servings (which still was enough for four salads) and followed it as written. I didn't have the bread, so I skipped the croutons and served it with grilled chicken and avacado. The dressing is a little thick, but it's not hard to coat the lettuce when you're tossing and the damp lettuce leaves thin it out a bit. I tried to blender it like others, but it was too thick. However, it wasn't hard to mix up by hand. Yummy and no raw egg to worry about!

Laura's Quick Slow Cooker Turkey Chili

Easy and came out great! Like the other reviewers I modified slightly, replacing soup with 1 can sliced tomatoes, adding the equivalent of one can of frozen corn and 1/2 cup water. Followed spices but skipped allspice as we didn't have it. Added 2 green chilies and 1 and a half Jalapenos as we like spice. Also liked this recipe because it fit in my smaller size crockpot and made 4-6 servings which is about right for us.

Pumpkin Soup

Low Fat Buttermilk Ranch Dressing

I used full fat buttermilk and sour cream with low-fat mayo because that's what I had on hand. I was also missing the chives. I liked the flavor and consistency. Definitely follow the directions and let it refrigerate for a while afterward. I served mine too soon, but it was so good the next day after all the flavors had blended! Also, it makes quite a lot. We have a small family, so I might halve the recipe next time.

Pumpkin Muffins II

I baked my Halloween pumpkin for the first time this year and was looking for ways to use up the puree. These muffins turned out great. I didn't have cloves and allspice, so I used 2 tsp. cinnamon, 2 tsp. nutmeg, and 2 tsp. pumpkin pie spice. Next time I will try the healthy substitutions others have suggested since I feel a little guilty about all the sugar. As others have noted this makes more that stated. I generously filled 12 muffin cups and had a little left over for one or two more.

Old Fashioned Potato Salad

Nothing beats my Mom's but this was pretty good! I doubled the recipe and followed as is except I chopped up bread and butter pickles since I didn't have relish and I also added a tablespoon of vinegar. As in some of the pictures I garnished with chopped egg slices and paprika. YUM!

Great! I made this as directed except I didn't have asafoetida and I added 3/4 of a green bell pepper as I cooked the cumin and garlic. My South Indian husband thought it was second only to his mom's!
