Pumpkin Cake II
This recipe was absolutely delicious I did make a few changes though I use applesauce instead of cooking oil and I use the whole can of pumpkin instead of just 1 cup instead of making a cake I made cupcakes I cook them for 20 mins at 350 and they came out perfect.

Apple Cinnamon Oatmeal Bread
Wow, I made this on a Sat morning to change up breakfast and it was absolutely delicious. My 8 & 2 yr old ate half the loaf and they are very picky boys. However I did change it a little. I didn't have apple cinnamon oatmeal I just had plain Quaker oats so I just took about 1/2 cup and mixed it with a tsp of butter and about 1 1/2 tsp cinnamon and sugar. I also didn't have baking soda so I substituted 2 tsp of baking powder. I used a can of unsweetened applesauce and added a chopped grannysmith apple. I also dusted the pan with cinnamon and sugar before I put in the mixture. I baked it for 55 minutes and when cooled I dusted with confectioners sugar. I was sooooo delicious and both my husband and children loved it and I will make it again:)

Zucchini Puffs
Wow, what a great recipe. They were so delicious and light and fluffy. My 2 boys even liked them and they had no idea there was Zucchini in them. I will definitely make them again. I did however cook them a little longer being that I like them a little more crispy. Excellent way to cook Zucchini and have my children and husband eat it:)
