Fresh Southern Peach Cobbler

Reviewed: Aug. 14, 2014
Delicious recipe! My husband raved about it to his friends since they go to a local diner just for their peach cobbler. Turns out that diner uses canned and it just doesn't compare to this. I didn't change a thing except after the first time I doubled the topping because it is so yummy, I wanted a little more than the recipe asked for. Delicious with a scoop of vanilla ice cream. Thanks for a great recipe!

Sangria! Sangria!

Reviewed: Apr. 8, 2011
The best sangria I have ever drank! I was sad when it was all gone. I mixed it with the ginger ale and it made it nice and smooth going down. I used fresh squeezed orange and lemon juice and also added a little bit of lime juice.

Spanikopita

Do not change a thing! This recipe is perfect as is. Flaky, buttery.... just so very tasty. I want some right now. One thing though, make sure your phyllo is completely thawed before using it or it will crack and it's very difficult folding up cracked pieces of phyllo.

Quinoa and Black Beans

Reviewed: Apr. 8, 2011
I am not a huge quinoa fan but I am trying to like it. This recipe definitely helps! The flavor is wonderful. I don't know if it was just me but I found that without sauteing the quinoa before adding the broth, I had to cook it a lot longer than 20 minutes. I think next time I make this, I will let them open up before adding the liquid.

I loved the sauce, I could eat it by itself! I think next time I will just use lettuce though, not much of a cabbage fan.

Chex® Muddy Buddies® -- Gluten Free!

Reviewed: Apr. 8, 2011
Perfect recipe! Tastes so much better than even the Chex brand Muddy buddies I buy at the store. My friends hate me because I make these for all our get togethers and they eat this by the cupful. A great snack or finger food at a party.

Quinoa Side Dish

Way too much onion. I couldn't even eat my serving because it's all I could taste. I think I will give it another shot but with a few alterations.

Homemade Black Bean Veggie Burgers

Reviewed: Apr. 8, 2011
I have never had a black bean patty before, so I really have nothing to base this recipe on BUT these taste amazing! I made them for a big barbeque because my friend couldn't eat meat (lent). She was so happy I thought of her but even more so when she tasted them. She raved about the flavor! One thing that was different when i made them was that I used black beans that I had boiled myself. Maybe that was the difference it need but my patty formed really nicely. I did have a little problem with stickiness, but if I sprinkled a little bread crumbs on the patty before forming, there was no problems. Also, I couldn't get them to stop sticking to the foil on the grill, so I ended up pan frying them with a little bit of veggie oil and it gave them a nice little crust on the outside. I will definitely be making these again for our next barbeque.

A very good recipe but lacking a little strawberry. I think next time, I will add at least another cup of strawberries to the recipe.

Donut Muffins

Reviewed: Apr. 8, 2011
OMG! These are delicious! Just like little donut holes but not as bad because they're baked, not fried! I found that using a basting brush and brushing the melted butter on top of the muffins before they came out of the pan helped a lot. Then I popped them all out into a gallon zip top bag and shook. I ate about 5 and sent the rest with my husband to work or I would have finished them off. I think one of my favorite things about this recipe is how easy and quick they are to make!

Oatmeal Peanut Butter Cookies

Reviewed: Apr. 8, 2011
As is, the recipe is pretty good. I did find the cookies a bit salty though. After making it again, I tweaked a few things. I only added 1/2 tsp of salt, added 1/2 cup more oatmeal and a tsp of vanilla. I also put some reeses pieces on top of them. So yummy and chewy! Definitely will make these again.

Old Fashioned Potato Salad

Reviewed: Mar. 28, 2011
I really love this recipe! I made just a few alterations from the original recipe (I have made it exactly as written and I thought it was a tad dry). Some of my changes included adding at least twice as much mayo, adding about 1/2 tsp paprika and about 1/2 cup of diced dill pickles. I also like to use red onions, they taste better to me and add a nice pop of color. So yummy! Oh and one thing I have found works good for potato salad is steaming the potatoes rather than boiling them. They hold their shape better and aren't all water logged.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Dec. 4, 2010
I recently made this for my friends baby shower and am happy to say it was a complete hit! I ended up making it a double batch and actually made it 3 days ahead of time (without cooking it), so I could just throw it in the oven. The only thing I did change was that I added a smidge more garlic. Everybody raved about how amazing it was and they all wanted the recipe. Unfortunately, even though I made a double batch, it was the first to go and I didn't get to bring home any leftovers. I am looking forward to our next get together so I can make this again. Thank you!!

Absolutely Fabulous Greek/House Dressing

Reviewed: Dec. 3, 2010
I made this recipe (scaled down to 8 servings) and almost ate it all to myself. I made a greek feast for my family and they couldn't believe that I had made the dressing. I of course passed on my secret and have told many others about this recipe. Thank you!!

Caramel Frosting IV

Reviewed: Dec. 3, 2010
OMG! This recipe is to die for! I made this and piped it on spice cupcakes and they were delicious. It is sweet and rich, so a little goes a long way. Someone else suggested using this as a sauce (minus the confectioners sugar) and I totally agree! I have a cheesecake planned for the near future and the sauce will definitely be on top of it.

Chicken Stir-Fry

Reviewed: Sep. 1, 2010
My husband and I eat this at least once a month, it is so good. I end up doubling the spices and soy sauce as well as mixing in a bit of cornstarch mixed with water because we like it really saucy and strong. One thing I prefer is using boneless skinless chicken thigh because I find it has more flavor than breast. I also add in about 2 cups of sprouts about 2 minutes before I finish cooking and we eat it tossed with stir fry noodles. It is of course delicious as is but you have to tweak things to your liking, right?! :) So yummy!
