Too Much Chocolate Cake

Wow, this is a great easy cake! Very moist and lots of chocolate. I used 1 cup mini chips and 1 cup regular size chips because that is what I had in the pantry. I think the mini chips worked well because you don't end up with the larger "chunks" from the regular size. Will make this over and over!!

Favorite Strawberry Rhubarb Pie

Everyone LOVED this pie! I used fresh rhubarb and fresh strawberries. The only substitute was cornstarch for the tapioca.

Crab Stuffed Chicken Breasts

This recipe is awesome! The crab mixture was wonderful (I did use fresh mushrooms and fresh crab instead of canned) and the sauce was great - make sure you boil it so it starts to thicken or use half and half, instead of milk if you like a thicker sauce. I had halibut on hand so I used that instead of chicken but I'm sure it would have turned out the same (great). I will be making it again, probably it try with chicken or even with salmon! Two thumbs UP!!

Shrimp and Broccoli

Good for a quick Cambell's based meal. A little bland, but not bad. It did taste like it was missing something, but not quite sure what. I Did add some baby spinach that I had left over in the fridge but I don't think it added or detracted from the dish.

Pesto Lasagna

I made this for my Parents and Husband and it was a HUGE hit!! My mom said it was the best lasagna she had ever had. I followed the recipe with one exception - I added 1 lb of small shrimp and used cottage cheese instead of ricotta. I'll make this again for sure! One thing I did find is that the 35 minute prep time was a bit under estimated for me. It took me about 45-50 minutes of prep time and I cooked it for 1 hour. I think letting it sit for a while (like 20-30 minutes) after taking it out of the oven would have let it set up better.
