Stuffed Artichokes

This is delicious, especially if you add pine nuts like another reviewer suggested. I used cubed sourdough baguette though bread crumbs would a lot easier to stuff between the leaves. Added oregano and used parmesan cheese instead. I had large artichokes so I had to double the recipe.

Russian Beet Salad with Herring

Very yummy though you do have to like beets and herring. I used herring that came with onions in sour cream. I sauteed my onions for fear of a strong raw onion taste that I am not fond of. Took some of akmommy23's advice to put mayo, salt, and pepper between each set of repeated layers and also added layers of hard-boiled egg. I think adding chopped walnuts or another very oily nut would be great.

Baked Tuna 'Crab' Cakes

These are real tasty. I couldn't figure out the perfect sauce pairing though. And I did have a problem with getting the outside crisp. By other reviewers suggestions, I tried browning them in a pan before going in the oven but the cornmeal seemed to make to thick of a crust. Perhaps using panko or regular breadcrumbs instead of cornmeal will give it that thin crispness it needs.

Lengua (Beef Tongue)

This is delicious! So tender and tasty. I've made your recipe at least four times in the past couple years, usually for tamales. After the tongue's done simmering, I just add sauteed onions and spices like cumin, onion, and garlic powder. Any tips on how to use the leftover spicy salted beef broth? I have so many containers of it in my freezer!

German Chocolate Birthday Cake

My first cake from scratch. Pros: Very moist and fluffy. Frosting was great and not too sweet. Cons: cake was not very chocolaty. Nearly couldn't really tell what flavor it was supposed to have. Tips: Be careful when cooking the frosting that you temper your eggs otherwise it will turn out chunky; mine did a little but it's covered up by the addition of the nuts and coconut flakes. I would add more chocolate or use a different kind.
