I grew up in Ohio. I am now teaching English in Beijing, China. Each year when I come back my suitcase is filled with import items that are hard to buy here. This past time I had around 20 pounds of chocolate chips, 9 pounds of frozen cheese, and about a dozen different spices just in my carry-on bag. I love the challenge of making food from scratch in a country where I can't run down to the store and buy it pre-made. And I am constantly looking for good substitutions for commonly used ingredients.

Pineapple Puffs
These tasted really great, but fell apart really easily. I used fresh pineapple instead of canned so maybe that was my problem. But everyone loved the taste, so I'd do it again.

Valentine's Day Strawberry Muffins
These are really good. I was lazy and didn't put the strawberries on top and instead sprinkled them with red and white sugar crystal sprinkles. Everyone was surprised at how good strawberries taste in a muffin.

Pear Honey
Delicious. I didn't have enough pineapple juice so I added some lemonade to the recipe to keep the pears from browning. It worked well. I also blended the pears after about 1 hour of cooking to speed things along.
