Ultimate Shrimp Scampi
This recipe is amazing! It's my go-to recipe for special dinner for my husband. I do everything the way the recipe calls for but I add fresh baby spinach, and I add it with all the ingredients EXCEPT the shrimp, I put a lid on the skillet (while on medium heat still) to let the spinach wilt, which only takes 1-2 min. Then I add the shrimp until pink, etc. It's better than any restaurant dish! Don't' skip the asiago or the avocado!

Peanut Butter Quesadillas
Kids LOVED this. I added banana slices (sliced long way) prior to cooking in the butter. I thought it was good but nothing I'd crave. It was a major major hit for my 2, 3, and 4 yr olds. They ate every bit. I did make sure it was pretty well cooled before serving because that peanut butter is like molten lava right when it comes out of the pan. Mine wasn't running all over the place as other reviewers had said but I didn't even cut them until they had cooled to just being warm, that may have helped the pb set a bit. I also didn't add any "dips" but offered honey to drizzle on because I preferred it that way and only the 2 yr old wanted it, the other two loved it the way it was. Served it with halved cherry tomatoes and baby carrots, they ALL had clean plates!

Layered Chicken and Black Bean Enchilada Casserole
Very good! Boyfriend and I LOVED it. My 3 yr old son loved it, my 4 yr old daughter kind of picked and my 2 yr old ate some. **TIP** Use the precooked grilled chicken in the refrigerator case.... cut WAY back on prep time. I just diced it up and threw it in the bowl and mixed with the spices, etc. I did add sauteed mushrooms and onions, couldn't really taste the mushrooms which was disappointing, next time I'll add more. ALSO I added 2 layers of fresh baby spinach over the tortilla layers, because I have a lot left over and we all love it. **NOTE** if your kids don't like spinach it's a great way to add it in because you couldn't taste it at all. Next time I'LL be adding more because we love it but it's a sneaky way to get in some greens!
