Baked Cinnamon Apple French Toast
Delicious recipe just as written, although I changed a few things to make it dairy free due to allergies, and to use fresh eggs. Used almond milk, dairy-free "butter," and 6 eggs, otherwise everything just as written, and it was scrumptious! Assembled the night before and served with scrambled eggs, bacon and fresh fruit for a complete and easy brunch for guests.

Kale Soup
This was really great! I don't have a Portuguese market near me, so I modified the recipe. I also added a few things for taste and nutritional value. Instead of the chourica, I used hot italian sausage. Also, instead of adding the 2 pork chops, I added beef boullion to the water in the soup to add some meaty flavor. I also added a can of condensed split pea soup with ham, which added great texture, flavor and nutritional value. Instead of the Pimenta Moida peppers, I added plenty of cayenne pepper, and also a spoonful of hot chili paste. I also added 1 can of diced tomatoes. I included all of the other ingredients (onion, garlic, beans, potatoes, kale, cabbage) as written. This was a delicious, healthy, spicy, satisfying meal. I served with a loaf of french bread.

Sage Pork Chops
Tasty and easy, but could use a little less salt. I didn't have sage, so I used a combination of other dried spices -- plenty of parsley, and a little marjoram, rosemary and italian seasonings. I doubled the seasonings, but next time I will only use 1 tsp. of salt, and 2 tsp of green dried seasonings (sage or a combo similar to what I put above). I put in half an onion and a clove of garlic in the broth simmering, and made gravy out of the broth. Served with mashed potatoes and asparagus. Yummy and so easy, using ingredients on hand!
