Asian Beef Skewers

I used the marinade for grilled steak (rather then skewers) and it was fabulous! I bet this would be a great marinade for pork or chicken too!

Pesto Chicken Florentine

This was pretty darn delicious. I was out of pesto so I added sundried tomatoes and red bell pepper when I sauteed the chicken. I seasoned the chicken with italian seasoning generously and fresh garlic....other than that I followed the recipe as written. Can't wait to try it with the pesto added to the alfredo sauce.....oh and ps while yes, jarred sauce would be easier, I did make the mix and yes it used another pan, but I really don't care for the heaviness of the jarred alfredo sauces available so the mix worked out just great for me.

Wild Rice and Asparagus Chicken Breasts

MMMM good! I did make a few changes. I added a little soy sauce, white wine, minced ginger, and garlic to the sauce. I also added a drained can of water chestnuts. Served over jasmine rice and it was GOOD!

Lentil Soup

This was phenomenal! Only change I made was that I didn't add the tomatoes or the wine until I was sure that the lentils were tender. I wasn't sure if lentils do what beans do and not become tender if exposed to the acids in tomatoes or wine so I wasn't taking any chances with crunchy lentils! This freezes really well too!

Chicken Fiesta Salad

This was really good. It reminds me of a salad that I order out at a restaurant here, so now when I have a craving, I can make it myself! Quick and easy. I grilled the chicken ahead of time.

Yummy Honey Chicken Kabobs

This was really good. The only thing that I did differently was to put all the chicken together on skewers and the veggies together on skewers. This way, if the veggies got done first they didn't burn while waiting for the chicken.

Bow Tie Pasta with Sausage and Sweet Peppers

This is one of our favorite dishes. I use red bell peppers, since they are sweeter. I also add freshly grated parmesan on top before serving.

Grilled Pork Tenderloins

This was incredible! I only made one tenderloin since there were just three of us at home tonight. Followed the recipe to a t otherwise. It did take a little longer than directed to grill but I figured it would vary based on meat weight and grill temperature. I really liked the cinnamon in this recipe, thought it gave it a unique flavor. Will definately make again!

Hawaiian Chicken Kabobs

I marinated my chicken for 24 hours partly by accident because I didn't know dinner had been planned for the day I started marinating these. I didn't marinate the pineapple with the chicken but added those to the kabobs when I was ready to grill them. That being said, this was delicious, very full of flavor. I would make these again in a heartbeat.

Awesome Honey Pecan Pork Chops

My husband made this while I was at work. The only thing we changed was to add a little more pecans. We both really like this recipe, and my husband DOES NOT COOK, so that tells you how easy it was!

Chicken Cordon Bleu II

Oh wow was this good! Very easy actually. I served it with rice and fresh broccoli and it went over very well with my family. I added more ham to each chicken roll than directed,(I used honey ham from our store's deli) but other than that I didn't change a thing.

Ten Minute Enchilada Sauce

Made a double batch of this and froze leftovers. Very delicious! Originally made because I didn't have any canned enchilada sauce in the house and I didn't want to run to the store. I will probably make it from scratch from now on now that I know how easy it is. Very easy to customize your spice level by adding more seasoning.

Baked Teriyaki Chicken

Amazingly good! I used boneless chicken breasts, poured the entire sauce mixture (after making it on the stovetop)over, and baked in the oven about 45 minutes. Yummy!

Slow Cooker Salisbury Steak

Very yummy! Followed the recipe to the t and it came out great. As for being on the salty side, yes, but I found it just fine. If you were sensitive or don't care for the saltiness, you could easily use low sodium soup, less onion soup mix (1/2 packet). My four and six year old gobbled this up!

Mexican Rice II

I always make this rice as a side for our Mexican dinners. I add a 1/4 cup frozen corn, 1 can rinsed, black beans, and a handful of green onions in the last 5 min of cooking. It adds some color as well as flavor! Excellant!

Very yummy, Very easy, Very quick....what more could you ask for? I was really surprised at how good these were. Recipe doesn't call for tons of ingredients, so it doesn't take long to throw together, a big plus in my book!

Lemon Mushroom Herb Chicken

This was really good! Really easy too! I got all the ingredients out and my husband cooked this while I was at work. We served it over rice. The only thing I would do differently, is cut down on the amount of butter a little bit.
