Yummy Honey Chicken Kabobs

This was really good. The only thing that I did differently was to put all the chicken together on skewers and the veggies together on skewers. This way, if the veggies got done first they didn't burn while waiting for the chicken.

Best Ever Sausage with Peppers, Onions, and Beer!

Wow! Really good! I actually made this in the crockpot because I was at work all day. I cut the sausage up first, browned it on the stove top. Put the sausage, onions, and peppers in the crockpot. Then I made the sauce (beer, tomato paste, and seasonings) on the stove in the pan I had used to brown the sausage. Added the sauce to the crockpot and cooked on low all day. We made into sandwiches and it had great flavor!

Pecan Breaded Chicken Breasts

I made some changes to this and I think that is why we liked it so much. I read that people had trouble getting the pecans to stick, so I ground them fairly fine in the food processor, and then mixed them with preseasoned breadcrumbs. This stayed on the chicken nicely and you still got the taste of the pecans. I browned them on the stove top as directed, but then placed them under the broiler to finish them up. This kept the breading from getting soggy.

Italian Sausage, Peppers, and Onions

I cut the sausage (used half spicy, half sweet) prior to cooking. (If you cut it slightly frozen, it is much easier to cut without it falling apart, so either don't defrost all the way, or stick into the freezer to slightly freeze) Made these into sandwiches on sub buns and it was excellant! Even more excellant with provolone cheese and creamy italian dressing!

Beef Barley Vegetable Soup

Threw the all the ingredients in the crockpot except the barley from the start. Cooked for 12 hours on low and added barley for the last half hour on high. This was very good. Easy and hearty for the winter!

Creamy Potato Pork Chop Bake

This was yummy comfort food! I seasoned my pork chops liberally with garlic powder, seasoning salt, and pepper. I had to bake this a little longer then written because my hashbrowns weren't totally defrosted, but it still came out yummy.

Guacamole

Yummy! I liked the fact that this didn't have sour cream, mayo, or cream cheese added. Who really wants added fat in your guacamole if it is fabulous without!

Beef Potato House Pie Casserole

Pretty good, although I added quite a bit of seasoning to the beef because I felt it needed it. I added garlic powder, basil, paprika, cajun seasoning, lots of pepper and salt. Good comfort meal though. I also used cheddar cheese instead of American and added cheese to both layers of potatoes that I used.

Quick and Easy Alfredo Sauce

I would rather just use heavy cream and make Alfredo the traditional way. You could totally taste cream cheese in this which doesn't belong in Alfredo sauce!!

Wild Rice and Asparagus Chicken Breasts

MMMM good! I did make a few changes. I added a little soy sauce, white wine, minced ginger, and garlic to the sauce. I also added a drained can of water chestnuts. Served over jasmine rice and it was GOOD!

Asian Beef Skewers

Lentil Soup

This was phenomenal! Only change I made was that I didn't add the tomatoes or the wine until I was sure that the lentils were tender. I wasn't sure if lentils do what beans do and not become tender if exposed to the acids in tomatoes or wine so I wasn't taking any chances with crunchy lentils! This freezes really well too!

Acapulco Chicken

We loved this! I grow jalapenos, so I am always looking for new recipes to use them in. The best part about this dish is that you can customize how spicy you want it to be. It is pretty spicy as is, depending on the brand of chili powder and hot pepper sauce you use.

Crusty Cornbread

Easy interesting hybrid of regular bread and cornbread. Turned out really well for chili night. It also makes very delicious toast, somewhat similar to english muffin bread. Would definately make again, got the thumbs up from my family.
