Salisbury Steak

MMMMMM! The ultimate comfort food! I make these with mashed potatoes and corn anytime I need something easy and comforting. Followed the recipe to the T and they came out great. I have also made a double batch, except for the sauce part, and have frozen one for later. Works really well. Just make the sauce when you are ready to use them, or use a beef gravy mix/jar for your sauce.

Beef Bourguignon II

My dad makes a fabulous beef burgundy, and I could not for the life of me find his recipe, so I punched in the ingredients on this site. Low and behold, this appeared. It is almost identical to my dad's and has always been a great comfort meal for me. The only things I did differently are, used 1 cup of beef broth and 1 cup of wine, and did not add extra onion for the last half hour. I grew up with this served over rice, so that is what I did. Fabulous!

Stuffed Green Peppers I

Very, very good. I even persuaded my four year old to eat some (which is quite a feat!) These were super easy to put together too. I only used 1 can of tomato soup because I only had 4 peppers and it worked out great! Quick and easy, you could even prepare these the day before and then just bake them off for a weeknight dinner.

Chicken Milano

This was wonderful! I tossed the chicken and sauce with bowtie pasta. I actually cut up the chicken into smaller pieces before cooking it, and it worked out great. Both my husband and I agreed that we would definately make this again.

Angel Chicken Pasta

Oh man was this yummy! I actually served over rice because that is what I had at the moment. Here's another thought on this:if you wanted to spice it up a little, when making the sauce, just add some cajun seasoning. Really enjoyed this!

Cajun Appetizer Meatballs

MMMMMM! I served these over egg noodles as a main dish and they were excellent! I mixed the barbeque sauce and the peach preserves together and then poured over the meatballs and allowed them to bake for an additional 10 minutes or so. It made such a yummy sauce! You could easily adjust how spicy these are by adding more or less cajun seasoning to them. I added what the recipe called for and they were perfect for us...nice and spicy!

Beef Enchiladas II

These were wonderful! I used canned enchilada sauce because I had one sitting in my cabinet. I also added some spices to the meat mixture (cumin, garlic salt, pepper, and taco seasoning) I only used one can of enchilada sauce, but could see where you might want to use two. These were quick, easy, and a nice change of pace from chicken enchiladas. Raves!!

Montreal Peppered Steak

Adds a very nice flavor to steak. I used the spicy montereal seasoning. Marinated the steak all afternoon in a ziploc. Will definately be using this again.

Lemon Ginger Shrimp

Very good. I marinated these overnight in a ziploc bag in the fridge, and served it over a bed of garlic olive oil pasta mix.(a box of Pasta Roni, couldn't have been easier!) My husband had 3 servings! The second time I made it, I served over rice and made homemade pineapple salsa (pineapple, jalapenos, cilantro, red onion, lime juice, and salt and pepper) to go over top of it, and it was a hit!

Chicken Cordon Bleu II

Oh wow was this good! Very easy actually. I served it with rice and fresh broccoli and it went over very well with my family. I added more ham to each chicken roll than directed,(I used honey ham from our store's deli) but other than that I didn't change a thing.

Jamie's Minestrone

I have tried countless recipes for minestrone. Some have turned out mediocre and some just plain bad. This turned out wonderful! My husband is an Iowa farmboy, so if it doesn't have meat, he doesn't eat it, but he had three bowls of this! Absolutely wonderful. I sliced all the veggies on my V-blade slicer and it made it super easy...no hand chopping for me. I am so happy that I have finally found a minestrone recipe that I can use again and again.

Wild Rice and Asparagus Chicken Breasts

MMMM good! I did make a few changes. I added a little soy sauce, white wine, minced ginger, and garlic to the sauce. I also added a drained can of water chestnuts. Served over jasmine rice and it was GOOD!

Lemon Mushroom Herb Chicken

This was really good! Really easy too! I got all the ingredients out and my husband cooked this while I was at work. We served it over rice. The only thing I would do differently, is cut down on the amount of butter a little bit.

Grilled Marinated Shrimp

This was absolutely fabulous! My husband thought it was the best shrimp he had ever had. I marinated precooked and shelled shrimp in a ziploc bag all afternoon and grilled on metal skewers and it worked great!

Angel Hair Pasta with Shrimp and Basil

This was very good. I used precooked shrimp to make it easier. I just added them to the sauce for 3-5 minutes or so to heat them through.

Beef Barley Vegetable Soup

Threw the all the ingredients in the crockpot except the barley from the start. Cooked for 12 hours on low and added barley for the last half hour on high. This was very good. Easy and hearty for the winter!

Chicken Fiesta Salad
