Quick Chicken Marsala

This was super easy and really good. My 5 and 3 year old even enjoyed it. Served it over rice. Great quick night dinner!

Layered Chicken and Black Bean Enchilada Casserole

Very good! I pre-fried the tortillas in a little bit of vegetable oil as I was afraid they would get soggy like others mentioned. Easy to throw together for a quick dinner especially if you just buy pre-cooked chicken

Goulash Supreme

Fabulous quick dinner! I added garlic powder, salt and pepper to the seasoning mix. I also added a can of drained corn. Great for those nights when you just don't have time to spend time on dinner.

Pecan Breaded Chicken Breasts

I made some changes to this and I think that is why we liked it so much. I read that people had trouble getting the pecans to stick, so I ground them fairly fine in the food processor, and then mixed them with preseasoned breadcrumbs. This stayed on the chicken nicely and you still got the taste of the pecans. I browned them on the stove top as directed, but then placed them under the broiler to finish them up. This kept the breading from getting soggy.

Garlic Green Beans

Louisiana Shrimp Creole II

Added a whole lot of cayanne pepper to make it spicy and served over rice. I used precooked shrimp and added them at the last minute. Good for a busy night when you don't have a whole lot of time to cook.

Easy Mexican Casserole

Really good! I did add about 1/2-3/4 cup salsa (was afraid it would be too dry) and precooked shredded chicken. It was quick and easy for a great weeknight meal.

Mexican Casserole

Pre-cooked chicken and shredded it. Also added about 1/2-3/4 cup salsa with a little bit of water because all the reviews saying it was too dry. Also used way more cheese then listed. With those changes, it was a big hit!

Italian Sausage, Peppers, and Onions

I cut the sausage (used half spicy, half sweet) prior to cooking. (If you cut it slightly frozen, it is much easier to cut without it falling apart, so either don't defrost all the way, or stick into the freezer to slightly freeze) Made these into sandwiches on sub buns and it was excellant! Even more excellant with provolone cheese and creamy italian dressing!

Taco Pizza

This was so good! I added green onions to the top before baking. I didn't have any tortilla chips or tomatoes at the time, but it would be really good with those on top after baking. I was a little skeptical about this recipe at first, but I am so glad I gave it a chance!!!

Italian Style Meatloaf I

This was pretty good. Nice change from regular meatloaf. I didn't use as many seasonings though as my breadcrumbs were already seasoned and I thought it would overwhelm the flavor.

These were pretty good! If you were seriously pressed for time, you could purchase ready made salsa verde and precooked chicken. This would cut down on your prep quite a bit.

Mexican Rice II

I always make this rice as a side for our Mexican dinners. I add a 1/4 cup frozen corn, 1 can rinsed, black beans, and a handful of green onions in the last 5 min of cooking. It adds some color as well as flavor! Excellant!

Brown Sugar Chops

These were really good, however, I did modify the recipe a little bit. (ok, a lot!) First, I used boneless pork chops, so I knew the full cooking time would dry them out. I also seasoned them with garlic powder, ginger, parsley,rosemary, cajun seasoning, and browned them on the stove top first. Then, I put them in the oven with the brown sugar, butter, and soy sauce. I only cooked them for another 15-20 minutes and it was perfect. Actually, I really think you could do the whole dish on the stovetop just by using a covered skillet.

Chicken Piccata II

Simple, simple, simple! I pounded my chicken first to make it cook more evenly. I like to garnish this with lemon slices and fresh rosemary. Served with rice and fresh green beans. Was a big hit!

Easy Slow Cooker French Dip

Very easy and requires minimal prep time! I sliced the beef up once it was done cooking and then returned the slices to the crockpot to soak up more of that wonderful au jus. Meanwhile I topped sub buns with swiss and placed them in the oven to toast. Better than ordering french dips out and much cheaper!

Apricot Pork Chops

Very yummy, Very easy, Very quick....what more could you ask for? I was really surprised at how good these were. Recipe doesn't call for tons of ingredients, so it doesn't take long to throw together, a big plus in my book!

Very yummy! A nice twist on an original recipe. I used shredded pepper jack cheese, and I chopped my jalapenos because they were too small to cut into strips and it worked out great for me.

Stuffed Shells III

Yummy! I browned 1 lb of ground beef and added that to the cheese mixture that I stuffed the shells with. I also added a little bit of sauce to the bottom of the dish before adding the shells. It keeps them from sticking. I actually got 2 dishes of shells out of this, so I froze one for later. We thought that these were even better leftover. The flavor devolopes more. Will definately add to my menu rotation.
