Black Bean Enchiladas

These were excellant! I added jalapenos to the bean mixture to spice it up a little. I also used a can of red enchilada sauce to roll these in and topped it off with picante, enchilada sauce and all cheddar cheese. Didn't even miss the meat!!!

Baked Teriyaki Chicken

Amazingly good! I used boneless chicken breasts, poured the entire sauce mixture (after making it on the stovetop)over, and baked in the oven about 45 minutes. Yummy!

Quick and Easy Alfredo Sauce

I would rather just use heavy cream and make Alfredo the traditional way. You could totally taste cream cheese in this which doesn't belong in Alfredo sauce!!

Slow Cooker Salisbury Steak

Very yummy! Followed the recipe to the t and it came out great. As for being on the salty side, yes, but I found it just fine. If you were sensitive or don't care for the saltiness, you could easily use low sodium soup, less onion soup mix (1/2 packet). My four and six year old gobbled this up!

Taqueria Style Tacos - Carne Asada

I just made the marinade for the beef because I was pushed for time and wowser!!!! This was sooooo good. I served on soft shell tortillas with colby jack cheese and pico de gallo and these were amazing! I will try and make them as written as soon as I get a chance to.

Coconut Shrimp I

Oh my goodness were these ever good! I will probably only make once in awhile due to the fact that they aren't the healthiest thing for you though. Loved the sweetness that the coconut gave the shrimp. I used precooked, deveined shrimp to save myself some time.

Barbecue Ham Pizza

Very tasty! I used a Boboli pizza crust (for time's sake)and used mozarella and colby jack cheeses. This was very yummy, no need to order out!

Enchilada Meatballs

Really good! I added a finely chopped onion, dash of cumin, and chopped cilantro to the mixture. Served them over rice, great change from BBQ meatballs.

Awesome Chicken and Yellow Rice Casserole

I totally cheated on this one. I used boneless chicken breasts, and cooked them with everything listed until done, then added to them to a Carribean rice mix. Good quick dinner, but not made exactly as written. Thanks for the idea though!

Beef Potato House Pie Casserole

Pretty good, although I added quite a bit of seasoning to the beef because I felt it needed it. I added garlic powder, basil, paprika, cajun seasoning, lots of pepper and salt. Good comfort meal though. I also used cheddar cheese instead of American and added cheese to both layers of potatoes that I used.

Creamy Potato Pork Chop Bake

This was yummy comfort food! I seasoned my pork chops liberally with garlic powder, seasoning salt, and pepper. I had to bake this a little longer then written because my hashbrowns weren't totally defrosted, but it still came out yummy.

Corn Chowder II

Great on a cold rainy night. I added about 1 cup more milk than called for because I wanted it to be not as thick as writen. I also added 2 cubed potatoes when I added the corn and 2 jalapeno peppers for an extra kick!

Cabbage Rolls II

I personally loved these, big cabbage fan that I am (it's the Irish in me!) Husband liked the filling (the Iowa farm boy in him) I doubled the sauce and added garlic to both the meat mixture and the sauce. I also added oregano, basil and marjoram to the meat to give it more flavor. I really liked the fact that you put them in the crockpot too! Will make again

Best Ever Sausage with Peppers, Onions, and Beer!

Wow! Really good! I actually made this in the crockpot because I was at work all day. I cut the sausage up first, browned it on the stove top. Put the sausage, onions, and peppers in the crockpot. Then I made the sauce (beer, tomato paste, and seasonings) on the stove in the pan I had used to brown the sausage. Added the sauce to the crockpot and cooked on low all day. We made into sandwiches and it had great flavor!
