Artichoke & Spinach Dip Restaurant Style

This was really spectacular! The biggest tip I can give if making this is use an alfredo sauce that you really like. Alfredo sauce makes up a huge part of this dip so obviously if you don't like jarred sauce, don't use jarred sauce! I mixed everything together in a bowl and threw it in the crockpot for New Years Eve. Low for 3 hours to heat through and then put on warm. Everyone loved this!

Potato Casserole II

I use less butter, and one can of cream of chicken, one can of cream of celery. I also sometimes sub out potato chips for French's onions, and sometimes add diced cooked ham. Anyway you make it is comfort food at it's best.

Slow-Cooker Pepper Steak

I make this all the time! The only thing I do differently is I add a little bit of ground ginger to it, use one red bell pepper and one green bell pepper, and I omit the salt. Soy sauce is salty enough. Really great. Sometimes I serve it over rice and sometimes I serve it over egg noodles. One of my go to crock pot recipes.

"Pantry Raid" Chicken Enchilada Casserole

Made this tonight. Added a can of drained corn and 1 can of drained fire roasted tomatoes with garlic. Used my own taco seasoning since I make my own. Didn't add water and used a roasted chicken breast that I shredded. Also added a little bit of the juice from my jar of pickled jalapenos for some heat. This was very very good. Love the fact that you can tailor this to your tastes. Could easily be made with ground beef as well. Add what you like. Delicious, would definitely make again!!

Kung Pao Chicken

5x the sauce other than the cornstarch part, left that as written. I added some extra veggies too. This was yummy delicious! Will definately add to my rotation!

Microwave Lemon Curd

This came out amazing! The only thing I did different from the original recipe was to only microwave it 30 seconds at a time in between stirring. I didn't want the egg to curdle. So easy and so much better than spending $7 on a tiny jar at the grocery store.

Taco Pie

I added a can of tomatoes and a can of green chilis in with the meat mixture and then topped with the sour cream, cheese, just enough crushed chips to cover it, more cheese, and green onions and cilantro. Thought this was very yummy. I like that it is a base recipe that you can add things that you would like to it. I thought about adding corn too.

Pesto Chicken Florentine

This was pretty darn delicious. I was out of pesto so I added sundried tomatoes and red bell pepper when I sauteed the chicken. I seasoned the chicken with italian seasoning generously and fresh garlic....other than that I followed the recipe as written. Can't wait to try it with the pesto added to the alfredo sauce.....oh and ps while yes, jarred sauce would be easier, I did make the mix and yes it used another pan, but I really don't care for the heaviness of the jarred alfredo sauces available so the mix worked out just great for me.

Lentil Soup

This was phenomenal! Only change I made was that I didn't add the tomatoes or the wine until I was sure that the lentils were tender. I wasn't sure if lentils do what beans do and not become tender if exposed to the acids in tomatoes or wine so I wasn't taking any chances with crunchy lentils! This freezes really well too!

Peanut Butter Noodles

Very delicious! I added a little bit of sesame oil to the sauce and grilled some chicken to put in this. Next time i'd add more chile paste because I love spicy! This recipe is wonderful because it's very easy to adjust to your tastes.....add veggies or meat more or less spicy. Yum, going to go eat my leftovers now!

Tomato Zucchini Casserole

This is incredible! Only changes I made were didn't butter the pan, just sprayed with non stick spray, sauteed the onion in olive oil with 1 tbs of butter and added a sprinkling of cheddar on top while browning the top and , just had to put in a larger pyrex dish since it wouldn't fit in a 9x9 for me. Very good, may try with mozarella next time as i'm sure that would be delicious as well.

Zesty Slow Cooker Chicken Barbecue

Very good and VERY easy, I didn't even defrost the chicken before throwing it in the crockpot. My 11 year old can even throw this one together. I added a little less brown sugar since I used a honey based bbq sauce, but you should definately use a bbq sauce that you love since that is the base to this dish. Served on buns and people could add jalapenos, cheese, or whatever else they wanted, super versitile.

Greek Orzo Salad

This is my new favorite pasta salad! So good! I followed the recipe to a t except that I used half a red onion. This makes a ton so if you didn't have a big group I would definately half the recipe. So delicious and very pretty, great summer side dish.

Crusty Cornbread

Easy interesting hybrid of regular bread and cornbread. Turned out really well for chili night. It also makes very delicious toast, somewhat similar to english muffin bread. Would definately make again, got the thumbs up from my family.

Slow Cooker Taco Soup

This was pretty good. The kids all liked it which is the big test in my house. I browned the ground beef with the onions and added taco seasoning to that before throwing it in the crockpot. I also only added 3/4 cup of water, but I don't even think that was necessary so next time i'll just omit the water. And instead of tomato sauce I added the equivalent of my homemade enchilada sauce and also added garlic and cumin. Great base recipe that you can customize to your tastes.
