Mexican Casserole

Hamburger Soup III

I add chopped onion and garlic (and zucchini if I have it,) omit the pasta, and serve it with cooked brown rice and shredded sharp cheddar on the side.

Chop Suey

I used a small amount of olive oil, chicken, fresh bean sprouts and added zucchini. We really enjoyed it and it will become one of my regular meals.

Greek Lemon Chicken Soup

I loved it! I did use a whole chicken, more vegetables, less chicken soup base, some whole wheat flour and 4 whole eggs instead of just egg yolks. I added oregano, which seemed to be what made the flavor complete. I added brown rice into individual bowls. I'll definitely be making this one over and over!

Skillet Fish Dinner

I really enjoyed this method of cooking fish. I did leave the fish filets whole and served topped with the vegetables. I've made it with different types of vegetables such as zucchini and mushrooms, depending on what I had on hand and it always turned out great.

Chicken Papadoris

This was awesome!!! I did make several changes because of the ingredients I had around, to add flavor and to make it healthier. I only used 2 T of butter. I added 1 t of cumin (which I sauteed with the onions) and 3 t of curry powder to increase the flavor, as well as salt and pepper. I added zucchini, shredded carrots and 1 C of frozen peas to include veggies. I want to try it with mushrooms and maybe also broccoli. I used cashews instead of pine nuts. Wow, thanks William!

Wasn't as good as I was hoping, nor worth the time it took to make it. I may experiment with it again because I love the nutritional value of quinoa.
