My hubby is a diabetic and also on kidney dialysis,  We are close to the top of the list for a kidney transplant.  His diet is very restrictive,  One of the tihings he cannot eat is beans, Kdney, pinto, great northern, etc.  I love bean recipes, especially chilies and soups.  What can I substitute for beans in these recipes?  Soybeans is also not an option.  Thanks,

Hi there, my husband is also diabetic with a highly restrictive diet. We read the Atkins Diabetes Revolution and found we could have better carb and sugar control with the information in that book. One of the dishes I make quite a bit is chili. It's supposed to have beans (like most chili recipes) but I sub with diced rutabega or turnip. It doesn't have quite the same flavor but is still delicious and the consistency can be controlled by cooking time. We also sub spaghetti squash where pasta is called for. Again, delicious! I wish you both luck in your battle with diabetes..:) Take care.

Can't help you with the food but I do want to give you and your hubby my prayers and hope for a healthy future.

thank both of you for your concern. My hubby's eating restrictions is not due to diabetes. It due to his not having a functioning kidney.

My cooking triumphs
This past Passover my daughter and I prepared a passover seder for our congregation. There were 121 attendees. We did this inspite of my arm being in a cast due to a fractured wrist. It was lots of fun and bonding for my fifteen year old. She is in my pic with me at that seder.
My cooking tragedies
My first married dinner was Pork and Beans with hamburger. Ugh. Nothing has topped that.
