Brown Rice and Black Bean Casserole

wow this was good! Doubled the rice, little bit extra chicken, added garlic, used cheddar/jack cheese. Great with sour cream and some hot sauce.

Swedish Meatballs (Svenska Kottbullar)

wow yummy! I used ground turkey for the meat. I also used Panko crumbs (about 1 cup worth). Served with brown rice instead of noodles. Turned out amazing! Followed the spices exactly. There are no drippings from ground turkey but the gravy still turned out good. Second night even better.

Simple Tasty Pasta Salad

I really liked this. Used whole wheat pasta and ditched the olives. Also used cut up bacon instead of bits. Great flavor. Perfect for a summer day/night.

Chicken Jerusalem I

I love the wine sauce! Served over brown rice which was a nice combo. Would have worked on pasta too. AS for the wine I used a cheap Pinot Grigio.

Terrific Turkey Chili

wonderful. I added drained can of kidney beans and black beans and used drained diced tomatoes and just added some puree to it to taste/texture. Next time I will leave out the zucchini though because don't think it made a difference.

Wow these were really good! They bake up really nice and stay soft on the inside after cooling. All I ever use is whole wheat flour so I loved this recipe. Using the whole wheat makes you fill up much faster!

Thank goodness for pregnant women and their cravings! This was wonderful! I think next time I will drain the tomatoes first, as it was a little too runny. I used flavored couscous. This will be on my dinner rotation now.

Black-Eyed Pea Gumbo

Wonderful. 2nd time I partially cooked the brown rice separately w a chicken bullion cube and then leave out the broth in the pot. It made it easier to cook through in a reasonable amount of time. Thanks for the recipe!

Sage Pork Chops

Wow! Really good. I will leave the salt out of the rub next time- and maybe use low sodium bullion because I did make gravy out of the drippings (for potatoes- pork didn't need any) and it was too salty. But the chops were so tender and had a ton of flavor. reheated the next day in microwave and was just as good!
