Hudson's Baked Tilapia with Dill Sauce

Oh my this was wonderful and so easy! If you add any salt make it very minimal because the cajun seasoning is salty too. I made steamed broccoli to go with it and added dill while it was cooking. The extra sauce I had I dipped my broccoli into. Very good sauce!

Wow these were really good! They bake up really nice and stay soft on the inside after cooling. All I ever use is whole wheat flour so I loved this recipe. Using the whole wheat makes you fill up much faster!

Couscous a la Me!

Thank goodness for pregnant women and their cravings! This was wonderful! I think next time I will drain the tomatoes first, as it was a little too runny. I used flavored couscous. This will be on my dinner rotation now.

Black-Eyed Pea Gumbo

Wonderful. 2nd time I partially cooked the brown rice separately w a chicken bullion cube and then leave out the broth in the pot. It made it easier to cook through in a reasonable amount of time. Thanks for the recipe!

I love the wine sauce! Served over brown rice which was a nice combo. Would have worked on pasta too. AS for the wine I used a cheap Pinot Grigio.

Sage Pork Chops

Wow! Really good. I will leave the salt out of the rub next time- and maybe use low sodium bullion because I did make gravy out of the drippings (for potatoes- pork didn't need any) and it was too salty. But the chops were so tender and had a ton of flavor. reheated the next day in microwave and was just as good!

This soup was so yummy! It tasted like something they would serve up on the soup menu at Olive Garden. I should've made bread to go with this though because its so low-cal that we were starving an hour later!

Salmon and Pesto with Rice

wonderful wonderful! Still good even the next day so that was a nice surprise because usually fish just doesn't reheat well. I did garlic and shallots and used more pesto than the recipe called for to flavor the rice more. My husband and his buddy loved it. Will make it again for sure.
