Indian Chickpeas

pretty great. I added some cornstarch to thicken it. Serve on brown rice and then spoon some yogurt over top ( i dilute low-fat plain yogurt and add dried mint).

Apple Enchilada Dessert

I did add cinnamon and nutmeg to apple filling. I spread some cream cheese inside each tortilla before adding apples and wrapping. Delicious! Do cook at least 30 min for a crispier top.

Wonderful! I added a little bit extra pesto. used whole wheat pasta. Next time I may try it on a hoagie next time for meatball subs.

Sausage Bowties with Artichokes

Very good! I used Kale (it is closer to taste and texture than broccoli), since I couldn't find rabe. I also used spicy Italian CHICKEN sausage. YUM! Double the artichoke hearts on this one! You can use about 8 oz. jarred roasted red peppers and chop them.

Swedish Meatballs (Svenska Kottbullar)

wow yummy! I used ground turkey for the meat. I also used Panko crumbs (about 1 cup worth). Served with brown rice instead of noodles. Turned out amazing! Followed the spices exactly. There are no drippings from ground turkey but the gravy still turned out good. Second night even better.

Simple Tasty Pasta Salad

I really liked this. Used whole wheat pasta and ditched the olives. Also used cut up bacon instead of bits. Great flavor. Perfect for a summer day/night.

This was great and was gobbled up very quickly! I didn't use the bread suggested... too expensive! Instead I just made the dip and served it warm with french bread/crackers.

Chicken Jerusalem I

I love the wine sauce! Served over brown rice which was a nice combo. Would have worked on pasta too. AS for the wine I used a cheap Pinot Grigio.
