Grilled Chile Rellenos
The flavor of this dish was amazing - my husband just loved it. But, as the other reviewer said - some poblanos are very hot, as mine were. Also, it wasn't clear in the directions, the peppers can be microwaved uncovered.

Apricot Cream Cheese Thumbprints
Best after sitting a few days in an airtight container. I added about 2x the lemon zest suggested, just for more flavor, and it really perks up the dough, though it still has a subtle taste. Don't expect these to be "in your face" cookies. Used cherry preserves as well as apricot, both delicious.

Chile Verde II
Very flavorful dish that needs less than two hours cooking time. As a novice cook, I made this for my anniversary and it really was a special meal, and different.
