Sour Cream Rhubarb Pie

I made two of these pies for a Memorial Day cookout - everyone loved them. I made the pies exactly as the recipe stated except I used cold butter instead of softened. I used low-fat sour cream and the consistency was fine. Excellent pie and it was delicious by itself (ice cream not required).

Connie's Zucchini "Crab" Cakes

We have made these for years and they're one of our favorite ways to use zucchini now. We followed other suggestions and bake for about 10 minutes each side rather than deep fry. Double this recipe to freeze leftovers - an easy grab n go lunch. Thank you Patti Jo! I've passed this recipe on to many people.

Egg and Sausage Casserole

We made the modifications in the reviews (10 eggs, 3/4 cup milk, Italian seasoning, 1 cup of each cheese, etc), but found the result only "okay". Given that ingredient list and health content, it should taste a lot better than that.

Barley Bake

We've made this multiple times this winter. You can switch up the veggies - we tend to use diced carrots, turnip, parsnip, celeriac, etc. The pine nuts are genius! And though I'm sure you can reduce the butter, it's yummy.

Curried Coconut Chicken

A simple, fabulous curry. Definitely better made a day ahead so the flavors can blend. We've also made this with firm tofu and loved it. Thanks for the great recipe!

Tomato and Basil Pasta Sauce

Thank you for the great recipe, Carolyn. I did not change a thing. We loved the zing of the red pepper flakes - even the five year old had seconds. It's a great way to use some of the basil rolling in from the garden.

Kentucky Biscuits

Amazing! I followed the advice of others and grated frozen butter - it's quick with a food processor. I also cut down on the kneading time (maybe 30 seconds) and they turned out fluffy and wonderful. Thank you for the great recipe.
