Boudreaux's Zydeco Stomp Gumbo

This recipe makes a lot of soup! I use old large yogurt containers to freeze it, which is the perfect size for my boyfriend and I for dinner. We get a good sized dinner out of it, and then about four more dinners. I buy the cheap $5 bag of precooked shrimp at Walmart and add it right before serving. I also use turkey sausage. My boyfriend LOVES this soup so I make it about once a month. To save on time I chop the vegetables while making the rue (you have to stir between each vegetable, but you save time!)

Healthy Turkey Loaf

I was nervous about making this. I couldn't believe that something made with such simple ingredients could be so delicious. I brought left-overs to work with me the next day. I'm a teacher and all of my students were very jealous of my delicious lunch. haha. They said it smelled amazing. It was very yummy, and healthy too!

Quiche

This was super easy. I made it for the first time today to bring to a friend's house for brunch. It was a huge hit! I used pre-made pie shells to save on time. I made one with spinach and bacon and the other with ham, peppers and onions. I made them and then put them right in the oven instead of freezing. I used 1/2 cup milk and 1/2 cup half and half instead of just milk. I also used cheddar cheese instead of swiss. They both came out great!

Chicken and Bacon Shish Kabobs

This was delicious! I took advice from previous reviews and doubled the marinate and did the chicken and mushrooms separately. I also grilled the meat separate from the veggies. I added grape tomatoes, pepper and onion in addition to the pineapple and mushrooms. Served with a side of brown rice. So yummy!

Cucumber Sandwiches III

So yummy!! I made these to test them out before making them for a bridal shower and they are so good I can't stop eating them! I did my own version of America's Test Kitchen and had my boyfriend try out each one and tell me his favorite. I served it on a sliced french baguette. Toasting it before putting on the spread made it so much more delicious, also using fresh dill was way better. I can't wait to share this at the shower!

Fruity Curry Chicken Salad

How is this SO good? I made a small portion to test out before making it for a bridal shower. All the ratings say make it the day before so the flavors can mix...but I can't stop eating it, so I don't know that I'll find out what it tastes like the day after. It's that good. I never would have thought of putting curry in, but it is so yummy! Thanks for the great recipe!

Super-Delicious Zuppa Toscana

This soup was absolutely delicious! I will definitely use this recipe again. I am giving it 4 stars instead of 5 because cooking the red pepper flakes in the beginning created a toxic fume in my kitchen! Both my boyfriend and I were coughing from the spicy fumes and we had to stop cooking to let the kitchen air-out. Next time I will probably use less red pepper flakes (maybe just 1 tespoon) and add them a little later to the broth so they're less likely to create those awful fumes...
