Easy Slow Cooker Chicken Wings

Reviewed: Feb. 19, 2002
I used chicken drumsticks instead since they were cheaper and I'm glad! This recipe makes the meat very tender and and delicious and any skin a bit soggy so the drumsticks worked best I think. I made this for a crowd as a sidedish for pizza and everyone was raving! No need to alter these unusual ingredients.. it's delicious the way it is!!

Baked Squash and Maple Syrup

Reviewed: Oct. 4, 2002
Wow! An elegant, easy and extremely delicious way to prepare butternut squash. I add a bit of chicken stock at a time because I found the whole amount to make it a bit to runny. I also add the maple syrup "to taste". What a fantastic combination of flavours!

Libby's® Pumpkin Cranberry Bread

Reviewed: Apr. 5, 2009
This is a standard "impress the co-workers" recipe! I use frozen blueberries instead which goes really well! I find the cranberries too sour.

Light Oat Bread

Reviewed: Aug. 29, 2010
This recipe is a fantastic base model. I use olive oil for the fat and then use a combination of whole grain flours to equal 3 cups. I've tried, one cup of all purpose with 2 cups of whole wheat, one cup of all purpose with one cup of whole wheat and one cup of rye, but my favourite is with all purpose and seven grain. I use the light crust setting on the bread machine and it seems to be not so tough on the crust.. a bit softer. Have fun experimenting with the combos!

Fast, easy and delicious. My husband loved these. Just freeze the whole batch, and when ready, thaw and microwave. Great with hot sauce!

Simple and surprisingly delicious! I served this for vegetarian guests with grilled portobello mushrooms and sliced tomatoes drizzled with olive oil and garlic. Big hit! Definitely a keeper :)

Chocolate Lovers' Favorite Cake

Reviewed: Apr. 22, 2002
I've been making my mom's chocolate cake since I can remember. Not anymore! :) This beats any chocolate cake recipe ever!! Since the batter is so moist, I found that it took a little longer to bake in the center than the edges but it may be my oven.

Shrimp and Broccoli

Absolutely delicious! However, to make a healthier version without the MSG, add a cup or so of roux thinned with milk instead of the soup. Delicious and nutritious :)

Excellent, rich flavor in a healthy dish! Yes, canned tomatoes are easiest as is cumin powder. Even better the next day. My husband loved this!

Mushroom and Leek Soup

Reviewed: Dec. 26, 2010
For an amazing low-carb alternative, put quinoi in instead of the orzo. Also a bit of cream is nice. You can also substitute 1/4 cup (or less) of balsamic vinegar for the sherry.

Chocolate Sandwich Cookies II

Reviewed: Mar. 2, 2008
Outstanding! I loved these because they are so unique and taste like little chocolate cheesecakes without the plate and fork to serve to a crowd. I was skeptical about the cake mix but I used two packages of devil's food cake mix and the cookies were extra chocolatey like ice cream sandwich cookies. I made the balls to flatten about half the size though so they turned out the size of a normal cookie rather than a giant one. Much more attractive this way. Also, I would cut the icing sugar in half next time. There was so much confectioners sugar that you could barely taste the cream cheese. I'll start with one cup and add to taste if necessary. I'm sure that way, it would have earned a 5-star rating from me. A keeper recipe for sure! I brought them to work and people actually came and found me after having one, usually with an "OMG" comment :) Enjoy! dee

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Mar. 25, 2013
This is an amazing cake but only served the next day. I made it twice - the first time I served it the next day and it was extremely impressive. The second time, I made it in the morning and served it for dessert. Even when I had a piece I was really disappointed. The next day it was absolutely delicious. MADE BETTER BY: Use the whole package of chocolate chips and reduce the sugar by 1/4 cup, add a few heaping tablespoons of cocoa and 1/4 tsp of almond extract!!

Blueberry-Lemon Crumb Bars

Reviewed: Feb. 18, 2013
These were absolutely delicious just after they cooled down a bit and were still slightly warm. They didn't taste so good the next day however and I was pretty disappointed. Something about the blueberries the next day seemed to turn more to taste like dates. Much better for serving immediately.
